Slow Cooker Italian Beef for Sandwiches

Very nice! This makes enough to serve a crowd or to serve you, over and over. Next time, I'll throw in some beef broth and maybe a touch of red wine. I'll also bag it in quart-sized freezer bags and store them in the freezer so they can be used for a quick lunch or supper.

Chicken Scarpariello

Made this as written and while it was pretty good, it was still quite bland. In an effort to do more with it, the next time I caramelized the onions, added garlic and fresh rosemary instead of dried, used a whole cup of white wine, a nice squirt of lemon juice, a touch of cream and smoked sea salt. It came out still pretty good even after the changes, but it's missing something.

Garlic Roasted Chicken and Potatoes

Ya'll, this is totally off the hook. The only changes I made were to add two sweet potatoes and to omit the maple syrup. I would have LOVED it, but hubby has a problem with sugary-sweetness in meat dishes, but he loves sweet potatoes. It was fantabulous! I had five very picky boys in the house and the table was quiet! I know, right? That alone should speak for itself. I am putting this into my weekly rotation. The potatoes are addicting and so delicious! It was super easy to assemble, too. Thank you, thank you, thank you!

Gingerbread Men

I got out my pudding and was like, "Dang, what the am I gonna do with all this freakin' pudding?" My kids were whining, "Mom, we want cookies!" So what I did next was jump on this here cookin' site and looked up cookies and I found this awesome mad cow of a recipe. I straight up went to the kitchen and whipped these bad boys up. They are off the hook, ya'll! My kids are all up in my stuff now, sayin', "Dang, Mom, these are bangin', you feel me?" Son, do yourself a favor and make these cookies NOW. Your street cred will go up by like, a bazillion. I'm out, y'all.

Slow Cooked Corned Beef for Sandwiches

I made this exactly as written. The roast itself was very tender. I will do this again, but flavor it according to my family's tastes. The method is great, but it isn't exactly what my family likes. Overall, it's a great recipe.

Lentils and Rice with Fried Onions (Mujadarrah)
