Pork and Green Chile Casserole

I used regular brown rice instead of instant, and did not cut up the pork (I used boneless pork chops). I browned the chops, mixed the remaining ingredients (except cheese) in a casserole dish (adding a little extra water), buried the pork chops in the mixture, covered it, and let it cook at 275 degrees for 3 1/2 hours. I took off the lid, stirred around the pork chops a little, and sprinkled on the cheese 10 minutes before the cooking time was up. It turned out delicious ... pork was tender and flavorful, and the rice mixture had a nice consistency and a wonderful flavor.

Hot Turkey Salad

What a wonderful, tasty dish using leftover turkey! I made the following adjustments based on the ingredients I had: I used chopped fresh red pepper instead of celery, and I added about 1/2 cup of garbanzo beans because I needed to use them up. I used seasoned salt, not regular salt. Also, instead of crushed potato chips, I used crushed white tortilla chips. I'm guessing the original recipe is tasty, based on everyone's reviews, but what I ended up making was scrumptious and I will definitely make it again!!

Chex® Apple-Almond Bars -- Gluten Free!

I needed to make a dessert for a gluten-free friend, and chose this. Instead of dried apples, I used a dried tropical fruit mix, and I thought it turned out very nice.

Quick Quiche

This recipe is awesome! My husband is not a "quiche man", but he LOVED this!! I tweaked it a little to use the ingredients I had on hand: I had sliced swiss cheese, so put 4 slices on top of the crumbled bacon in the bottom of the pie pan. I used a little bit of the bacon grease to saute some thin-sliced ham and sliced mushrooms, and layered that on next. I covered that with some shredded monterey jack cheese. I mixed the rest of the ingredients as directed, although I used seasoned salt in place of the salt. I poured the mixed liquid ingredients over everything, and baked as directed. YUMMM!! It's been good as leftovers, too!
