Irish Stew

World's Best Lasagna

I just had a small gathering and made this Lasagna. Everyone loved it. A few changes I made: 1- I used turkey sausage and turkey ground beef (for health propose). 2- did not use funnel (was not sure if kids would like it. It came up very good. I will make it again.

Creamiest Rice Pudding

Mine also came out not thick even though I read the reviews and followed them. I have not given up yet. I will try again but next time I will thicken the rice mixture really well before I added eggs. It tastes really good.

Roasted Vegetables

This recipe was just OK. I followed the recipe exactly the same. First, it is not a very easy recipe (too many ingredients and takes too much time). Second, you should choose veggies with similar cooking time (I had to remove all the carrots and cook them extra in microwave. I made it a day before the party. That was a good move. It saved me time and effort. The flavor was good. I also removed the bay leaves after the veggies were cooked. Next time I will make 1/2 amount and cook carrots a little ahead of the time.

Chef John's Chicken and Mushrooms

This recipe is great. It is very simple and tasty. Totally recommend it. I served it with rice and followed the recipe as it is. It came out very good. Next time I will try “chicken broth” instead of “water” (just to see the difference). I also made some chopped sweet onions, parsley and lime for the side dish to go with this meal. My husband is very picky but he gave this meal a 5 star.

Black-Eyed Pea Gumbo

I made this recipe for New Year. It came out great. I also changed slightly to my husband's test. I made with dried beans, added only one can of tomato and added frozen cut okras. Also added one bay leave. My husband loved it. Will make it again.

Tomato Zucchini Casserole

This recipe was pretty good. I made it for my party and everyone liked it. For my test, it was too runny. Next time I will follow the recommendation of letting the tomatoes sit and dry them out first. It has a great flavor of fresh herbs. I will make it again.

Chef John's Make-Ahead Turkey Gravy

This is a very good recipe. I agree it was a little time consuming but it was well worth it. The only thing I will change next time is to cook the flour in oil a little longer. Also, I added small amount of horseradish sauce at the end (only because I like a stronger test). This recipe is a keeper. I recommend to watch the move as well.

Black Bean and Corn Salad II

It is a great recipe. I did not use the hot sauce (my husband has allergy to it). Still it came out very good. I recommend to go easy with the sugar. It is very colorful. I chilled it over night. Will make it again.

Mojo Roast Chicken (Pollo Asado)

Fantastic!! I used Spanish Bitter Orange (you can find that in the Spanish section of your grocery store) instead of orange juice. I went easy on the olive oil and used organic chicken (normally they are less fatty). Make sure you trim all extra fat from the skin (as much as you can) otherwise, it’ll be very oily.
