Insanely Easy Vegetarian Chili

My family loved this chili, including my father who is a meat and potatoes guy. The first time I made it I had a variety of veggies and mushrooms and it was great. The second time I made it I only used button mushrooms and fewer veggies and it didn't taste as good. Also, there are lots of veggies to clean and chop. I wouldn't call it easy.

Beef Florentine

We thought this was average. For our taste, it had too much spinach. I did add a bit more seasonings and had to add more when it was finished to overcome the spinach flavor.

Sangria! Sangria!

We made this recently for a pool party and it was a hit. Everyone enjoyed it. We didn't wait the 2 hours before drinking it and it was still very good. We used Merlot wine and rum (had it on hand). We will make this again and again.

Rainbow Pasta Salad II

This was easy to make and tasty. I used Kraft Roasted Red Pepper Italian w/ Parmesan dressing. I made only 1/2 a recipe and it was a lot. I plan on adding chicken and freshly grated parmesan cheese to the leftovers for variety.

Russian Potato Salad

This was a very unique potato salad and a very nice change from the norm. I'd truly rate it about a 3 1/2. July '07 update: I've made this several more times and we really like it. I would say it is definitely a "4" now. I modified it a bit and we like it better. I don't add the onions (we don't like them.) Also, rather than use all dill pickles, I used about 2 1/2 dill pickles chopped up and the same amount of bread and butter pickles chopped up.

Spinach Quiche

We enjoyed this recipe. I used broccoli rather than spinach due to family preference. I used panko bread crumbs and salted it with BVI Caribbean Seasoning rather than croutons. I also used reduced fat cheese and fat free cottage cheese and it tasted great and was healthier.

Red Cabbage

I thought this recipe had a bit too much bite for my taste. I'll use less vinegar next time. I used White Balsamic vinegar. My dh liked it more than me. The kids didn't like it at all.

Overnight Caramel French Toast

We wanted caramel apple french toast, so I used this recipe and added a can of apple pie filling on top of the caramel sauce. The caramel flavor was masked a bit by the apples. It was enjoyed thoroughly by adults and slightly less by the children (ages 6 & 9).

Applesauce Pork Loin

Everyone loved it. It was moist. I didn't use the rosemary sprigs because I thought my kids (ages 6 & 9) wouldn't like it. My youngest did notice the pepper - I will use less next time.

Baked Teriyaki Chicken

Wow. What great chicken. My entire family loved it, including my picky eaters (ages 6 & 9). I used skinless, boneless breasts and cooked it at 375 for about 45 minutes (which was too long). I used the lower temperature because I was also cooking rice and it required that temperature. We loved the sauce over the rice too.

Hearty Vegetable Lasagna

We found this recipe to just be average. It seemed to be missing something. It was better the next day, but I'd like it to taste that good on the first day and get even better. I made the lasagna with no boil noodles - it may be why we didn't think it was so great. I especially noticed on the next day that it was very, very dry. I will try again with regular noodles.

Roasted Vegetables

Our favored veggies were the red peppers, then the onions. We had a couple problems with this recipe. The Yukon gold potatoes were very dry and not tasty; some of the sweet potatoes were overdone and mushy. I swapped carrots for the squash (only I barely like squash) and they were cooked perfectly. I also added a few leftover mushrooms for the last 10 minutes and they were excellent. I will say that as I've been reheating the veggies, I really believe the flavors of this recipe are a '5'. The Yukon Golds tho still don't seem to have a lot of flavor. I had huge Yukons, so maybe that was part of the problem.
