Ginger Glazed Mahi Mahi

This was just ok. My b/f and I didn't really care for it. We cleaned our plates; however, I will not be making this again.

Best Ever Shrimp Dip

Reviewed: Jan. 1, 2014
This dip was a hit!! It's awesome as is! I sauteed my shrimp in olive oil with garlic, white wine, and lemon juice. The dip definitely needs time in the fridge to let the flavors come together. So tasty!

A-Mazing!!! I didn't have brown sugar, but it still worked! I intended to make it for a large block party, but didn't have time. I'm regretting that now!! This is fantastic!!

Barbie's Tuna Salad

Reviewed: Jun. 24, 2010
This stuff is great!!! Waaaaaay too much mayo though! I stopped adding at four tbs. and that was still too much. I had to go back to add more tuna and spices just to even it out!! We ate it with lettuce and tomato as a wrap! Way yum!!

Zesty Slow Cooker Chicken Barbecue

Reviewed: Jun. 24, 2010
Oh man!! This stuff is great, and OMG it is so easy!! The first time I used the slow cooker on high for the recommended time, did as others did by taking it out about an hour before to shred the chicken. I use only 4 chicken breast instead of 6, and it still makes plenty!! I did not change the quantity of ingredients either, the chicken just soaks it right up. A tip to some though, as it is cooking, it will get very watery!! I was extremely concerned my first time, because the mixture had turned into soup and I thought I had done something wrong. The second time I made it (within one week of each other) I put the slow cooker on low for about 6 hours, again shredding the chicken to cook for the last hour. This time, the chicken just fell apart! I couldn't even get it out of the pot. It was fabulous as usual, but was a little watery. I suppose next time I cook on low I will reduce the amount liquids to see if it helps. This is my new favorite!!! Thanks for the great recipe!

Awesome recipe!!! We spend a lot of time in New Orleans, and this was better than any cajun dish I have had in a restaurant there. Fantastic!

Slow Cooker Italian Chicken Alfredo

Reviewed: Apr. 23, 2010
We thought this was fantastic, and my boyfriend said I better hold onto this recipe. The only changes that I made was that I added a few green onions to cook, and threw in a little fresh basil about 10 minutes before serving. I will definitely be making this again!

Extreme Banana Nut Bread 'EBNB'

Reviewed: Apr. 1, 2010
This is a fantastic recipe!! I keep missing some of the directions though. First I didn't put enough bananas, and the second time I put a TON of bananas. I'll try this again soon, and maybe I"ll get it right!

Roasted Italian Herb Chicken

Reviewed: Mar. 12, 2010
This recipe was just "OK" for me. I admit I did expect it to be a bit crunchier, and it was just too soft. It did have good flavor, but it just wasn't my favorite.

Frank's® Red Hot® Buffalo Chicken Dip

Reviewed: Mar. 12, 2010
I absolutely love this stuff!!! Everytime we have people over, my boyfriend demands that I make it!! I like to actually boil a couple chicken breasts, and shred it myself, because it gives it a better texture. I can't tell you how many times guests have asked for this recipe!! It's my little secret!! :)

Red Garlic Mashed Potatoes

Reviewed: Mar. 12, 2010
These potatoes are fabulous ONLY if you cut the sugar waaaay down which is why I gave it 4 stars. The first time I made them as the recipe called, I was really disappointed. The second time, I only added sugar a teaspoon full at a time. I think I wound up using only three teaspoons, and that time it was perfect!!!!

Taco Lasagna

Reviewed: Mar. 12, 2010
I actually made this with ground turkey, and it was fabulous! I made a few changes though, and cooked most of the green onions, onions, and garlic with the meat to give the turkey meat more flavor. I took some other's advice, and because it is just me and my boyfriend, I cut the recipe in half. Used the water recommendation on the taco seasoning pack so it would not be dry. Mixed the ground turkey mix with the sour cream for layering, and added refried beans. Served over lettuce and garnished with tomatoes. It's my new favorite weekday meal!! Terrific!!
