Savory Herb Rice

Smokin' Scovilles Turkey Chili

My husband can't handle spicy, but I really wanted to try this, so I just cut all the spices in half. It was still too spicy for him, but perfect for me! Oh, and to make it vegetarian, I added two more cans of beans and left out the turkey. It was by far the best chili I've ever had in my life :)

Ratatouille

I had made ratatouille once before, and wasn't too pleased with it. After reading this recipe and the reviews, I felt like I needed to give it one more try - and I'm so glad I did! I used extra virgin olive oil, a little less than called for, and an extra clove of garlic (just because I like garlic). I didn't have any mushrooms, but I didn't miss them. Also, per other reviews, I sauteed the onion with the eggplant, and skipped the whole layering fiasco, just throwing everything together in a 9x13. And I didn't have any trouble with extra juices as I never put a lid on it. Oooh it was so good! I am going to go eat the last of the leftovers now. Thanks for the amazing recipe!

Pumpkin, Sweet Potato, Leek and Coconut Milk Soup

This was SO good! Only four stars because although I loved it, my husband didn't rave over it like he usually does for everything I make. I used onions instead of leeks and left everything chunky, because that's how I like my soup. I loved the sweetness of the coconut milk.

Unbelievable Spinach Calzones

Spinach Enchiladas

This was definitely a winner! I must admit I was a little skeptical at first, but I'm so glad I tried it. I subbed nonfat cottage cheese for the ricotta and sour cream, and tossed some red peppers in with the onion (white, not green) and garlic. I also mixed 2 cups of black beans in with the cheeses for added protein. And I was stubborn and used flour tortillas and my own enchilada sauce because that's what I always do. But I never in a thousand years would have been brave enough to put spinach and cottage cheese in my enchiladas if it weren't for this recipe and all the positive ratings. And I'm so glad I did - they were so delicious, and super healthy to boot! Thanks for the great recipe!

Southern Fried Cabbage

Wow! Normally I hate cabbage, but this tasted great! I was out of bacon, so I fried it up with a little breakfast sausage instead. I served it with the Southern Ham and Brown Beans recipe from this site and some hot cornbread, and the cabbage was the first thing gone. I will definitely be making this again!

Herb-Stuffed Red Peppers

This was SO good! I don't usually like stuffed peppers, but it was really delicious with the sweet red peppers and the zesty filling and sauce. I was a little wary of using so much dried herbs, but I'm so glad I did. I'm not a big fan of ground beef, so I cut that down while using 3/4 cup each cooked brown rice and cooked pearl barley. I also threw in half a can of corn for a little color and texture. It was the best meal we had all week!

Chicken, Spinach, and Potato Soup

This soup probably deserves more stars, but I tried doing it in the crockpot. I left the parmesan cheese out until the very end, and I probably should have done the same with the spinach. It was still okay, but nothing spectacular.

Cheesy Acorn Squash

This was so good! Since we don't like mushrooms, I cooked up some barley and brown rice in broth, and added it in place of the mushrooms - it was very tasty and filling this way. I tripled the recipe, and there was so much filling I used a 9x13 to hold the filled squash halves and all the extra filling. It was a great casserole! Thanks!

Pumpkin Black Bean Soup

Excellent! Per other reviews, I left out the ham, added a teaspoon of cumin and a bay leaf, and used 2 tablespoons white vinegar (that's what I had on hand). I sauteed the onion and garlic, then put everything in the crockpot and let it cook on low all day. It turned out great!

Southern Ham and Brown Beans

This was so yummy! We've had it three times now, and the first time was definitely the best because I simmered it for 8 hours. It's still good if you only have 3 hours, but not anything spectacular. You should really only make it if you'll be able to let it simmer all day. Serve with fried cabbage and cornbread - a first-rate Southern meal!

Lentil and Sausage Soup

This soup was so good! To save time, I started the lentils boiling separately while I browned the sausage and sauteed the veggies. Start to finish was just under an hour. I doubled the recipe to use up a whole pound of spicy sausage and it made a ton!
