I had made ratatouille once before, and wasn't too pleased with it. After reading this recipe and the reviews, I felt like I needed to give it one more try - and I'm so glad I did! I used extra virgin olive oil, a little less than called for, and an extra clove of garlic (just because I like garlic). I didn't have any mushrooms, but I didn't miss them. Also, per other reviews, I sauteed the onion with the eggplant, and skipped the whole layering fiasco, just throwing everything together in a 9x13. And I didn't have any trouble with extra juices as I never put a lid on it. Oooh it was so good! I am going to go eat the last of the leftovers now. Thanks for the amazing recipe!
