Cajun Style Blackened Snapper

Reviewed: Dec. 16, 2010
It's a very quick and easy recipe. Be sure to use lots of butter! I did 3 mins on one side and 2 on the other. 2 teaspoons of cayenne pepper is way too spicy for me, so for 2 pieces of fish I used 1/3 tsp.

Almond Shortbread I

Reviewed: Dec. 4, 2010
Great recipe! I used only 2 cups of flour, and rolled the dough into two logs 1 1/2 inch in diameter, popped them in the freezer for an hour and sliced them into 1/2 inch thick cookies. Baked for 30 mins.

Best Steak Marinade in Existence

Reviewed: Nov. 28, 2010
this is a good marinade. i wouldn't say it's extraordinary. i marinated two rib eye steaks for about 24 hours. they were definitely good, but between marinading for 24 hours and throwing some montreal steak spice and worcestershire an hour before cooking - not that crazy of a difference. if you're using an excellent cut of meat is a lot more important.

Cajun Seafood Pasta

Reviewed: Nov. 19, 2010
Delicious with the following changes: I used cilantro instead of parsley (just personal preference, I'm not a fan of parsley :S); 2 tsp of chilis was WAY too much, next time I'll use maybe 1/2 tsp or less; I omitted white pepper and Swiss cheese simply because I didn't have any; used only 1 1/2 tsp salt, and used fresh fettuccine. Excellent recipe, definitely will be making it again.

Shrimp Lemon Pepper Linguini

Reviewed: Apr. 24, 2010
delicious and very easy! i made it with fresh angel hair pasta, and instead of just shrimp i used a variety of seafood: shrimp, squid, calamari, and mussels. i precooked the seafood in some boiling water for 5 minutes before adding it to the reduction. and i put some shredded mozzarella on top.

Big Soft Ginger Cookies

Reviewed: Feb. 20, 2010
can't go wrong with these. next time i'll put in less sugar though, they turned out to be really really sweet. be sure to place them about 1 inch from each other on the baking sheet so they have that nice round shape and don't run into each other! delicious.

Raspberry White Chocolate Mousse

Reviewed: Jan. 3, 2010
so delicious and so heavy! the sauce was a bit too tart, i'd add more sugar and not add too much of it to each serving. but it was a really good recipe!

Roasted Vegetables

Reviewed: Jan. 3, 2010
delicious! i also added pieces of pineapple and asparagus just because i had some handy.. it was really good! as some reviewers have recommended, i tried roasting mushier veggies apart from harder veggies, but i found that it`s not all that necessary. the second time i roasted them all together. great recipe! and super easy too.

Sandy's Chocolate Cake

Reviewed: Dec. 28, 2009
i made cupcakes out of the batter. turned out very fluffy. i didn't have confectioner's sugar so i used regular sugar and the icing turned out crunchy. if you like fluffy cake, you'll like this. i prefer more moist cakes.

Eileen's Spicy Gingerbread Men

Reviewed: Dec. 25, 2009
i rolled these out too thinly because i thought i wasn't gonna have enough dough. they came out crispy but still good. next time i won't make them this thin. rolled out between two pieces of plastic wrap because i didn't have any wax paper - worked just as well.

Finnish Cookie Sticks

Reviewed: Dec. 25, 2009
i overbaked for a few minutes because after 10 minutes they came out very soft and didn't feel cooked through. DO NOT DO THIS! they will stiffen up after they cool. but they were still delicious. i also mixed sugar with the crushed almonds, and it worked.
