Citrus Turkey Brine

Oh, this is so good. I use kosher salt instead of regular table salt. I know some of you are going yikes! But if you rinse the turkey well, it will be fine. I too use the leftover citrus and stuff the cavity with it. I also use a little brown sugar and instead of pepper, I use peppercorns. I cook the turkey breast down, for all the juices go there. I served this last year, and got rave reviews. This recipe is a keeper!

I love this recipe! My kids and husband like it too. Sometimes I use chicken instead of beef. I will take boneless breasts, and cut them in strips, like you would do the meat. I do let it simmer a little bit longer, as chicken takes longer to cook. I usually serve over egg noodles. Chicken or beef, this recipe is really good.

Chicken Breasts with Balsamic Vinegar and Garlic

I have made this recipe several times! It has become a staple in our family. The only thing I do differently, is I coat the chicken in breadcrumbs, rather than flour. I don't get the slimy effect, and it does add a little thickness to the reduction sauce.
