Mexican Quinoa

So good! I added black beans and used low sodium vegetable broth to make it vegetarian. Made a burrito with it. Definitely will make again!

Creamy Au Gratin Potatoes

Very good. Made without the onion though. My husband seriously dislikes onions! Will definitely make again. The 2 hour prep and cook time is not very weeknight friendly though.

Apple Pie Muffins

Very good. I was tempted to add cinnamon to the batter but I'm glad I didn't. There is plenty of flavor in the topping and the flavor of the apples stand alone just great. Family loved them. Will definitely make again.

Best Spanish Rice

Mango-Peach Smoothie

Good tropical flavor. Pretty thick so had to add more orange juice and soy milk but the kids liked it so I considered that a big win. I added wheat germ to my portion. Would definitely make again.

Classic Bran Muffins

These are great muffins! Easy to make, texture is not dense, beautiful color and tasty. And I like that the recipe only makes a dozen. They are easy enough to make a fresh batch when we run out which we did already after making them just yesterday. My 7 and 5 year olds loved them! They want me to make more today. This is a definite keeper!

Banana Oat Muffins

Loved the golden brown color the muffins were when taking them out of the oven after 18 minutes. Just beautiful. They had good banana flavor and were moist. I even added 1/2 cup of mini chocolate chips. Kids loved them! Would make again.

Flourless Chocolate Cake II

This cake was a hit with my entire family! My husband who has gone gluten free especially liked it. He liked the brownie texture. It was difficult to get out of the pan without destroying it though. Awesome with vanilla ice cream! Will make again!

Oatmeal Peanut Butter Cookies

Good peanut butter flavor but a little salty I think. With the salt in the peanut butter, the salted butter (1 stick that I used instead of margarine), and the added salt in the recipe it made them a tad too salty. Husband said they were good. I added an extra half cup of oats per review suggestions and I'm glad I did. I baked some of the cookies with semi sweet chocolate chips, a few cookies with white chocolate chips, and some of the cookies with no chocolate chips at all just to see what tasted best. They all tasted good with or without chips. I guess I would make again but I would cut back on the salt.

Chocolate Zucchini Muffins

Followed recipe as written except I put chocolate chips in the 2nd batch of 12 muffins. I found all the muffins rather dry with not a lot of flavor. I didn't like adding a whole cup of oil but did it anyway. I thought about not making these again but I think I will try one more time substituting apple sauce for part of the oil and heaping the amounts of the spices to get more flavor. Maybe adding choc. chips again. If after that they aren't good, then I will definitely move on.

Applesauce Bars

Flavor is mild. I think I will add some ground ginger next time. They were done in 20 min. using a 9 x 13 pan. Yes, they do come out thin but not a big deal. Very good and will make again. Family liked it too.

The Best Rolled Sugar Cookies

I've never made rolled sugar cookies before. In terms of rolling and cutting I found it quite easy. After following the recipe exactly, baking, frosting and eating them I thought they were kind of bland which is shocking with SO MANY great reviews. I think I will make some changes next time with some of the other reviewers suggestions. I like a crunchier cookie too so I will probably roll thinner next time and/or bake longer.
