Greek Pasta Salad I

I made a few substitutions, but it was very good. I did find the vinaigrette to be too vinegary. I will use less next time -- and there will be a next time.

Cream of Pumpkin Soup

I converted this to a lighter, heart healthy version and I liked ita lot. I made double the recipe. I used a real pumpkin that I cooked and pureed. I used canola oil instead of butter for sauteeing the onion, and I used a can of light coconut milk instead of cream to bring the calories down and contribute to heart health. I also used more spice than the recipe called for and I added some alspice. Instead of croutons, I roasted the pumpkin seeds with paprika and sprinkled them on top. I will definitely make this again.

Super Orange Chicken

I like this a lot. It has a strong flavor, and that's fine with me. I used more chicken than the recipe called for and I like having lots of sauce. Will definitely make this one again.

Chicken Tagine

Loved the taste. I used frozen chicken legs and thighs (unbrowned) but I browned fresh garlic and the onions. I used fresh ginger and fresh apricots instead of dried. I also found the recipe cooked in about five hours on low in my slow cooker. I expect cooking times vary depending on the type of cooker used. I will increase the spices next time I make this, and there will be a next time.

Pork and Pepper Stir Fry

Definitely use more vegetables. When I make it again, I will double the vegetables and increase the liquids accordingly. I marinated the meat for several hours and I included some minced ginger and shallot sauce rather than using fresh ginger. The dish was extremely good. Will Make again.

African Peanut Soup

I love this soup. I did doctor it up somewhat, based on comments and reviews. I added a yam, upped the rice content, doubled the spice, added some cumin and used chicken bullion cubes. I might use fresh chicken next time. I don't have any sour cream to put on top. I try to keep fat content down, so perhaps I will get some low fat yogurt and try that instead.

Spanish Rice Bake

This is a great recipe. I made some substitutions, however. I used brown rice for nutritional purposes, and cooked it separately due to the longer cooking time required. I added the cooked rice to the mix before simmering. I used fresh tomatoes, skinned, instead of canned, and added a little extra water. I also used some garlic flakes, and I used hot chilli sauce instead of sweet. I omitted the brown sugar. I didn't have cheddar cheese so I used a bit of parmesan. Cheddar would have been better and I will do that next time. There will be a next time-- I like this recipe quite a bit.

Layered Chicken and Black Bean Enchilada Casserole

I made several substitutions based on reviews here. I used black beans instead of corn, I cooked the skinless chicken breasts in the crock pot, I substituted a red bell pepper for the canned chile peppers, I added 1/4 cup of raw brown rice, and I forgot to buy cilantro. I was excellent but next time I will try to remember the cilantro as I think it would be a good addition. I can't really rate the original recipe as I made too many modifications.
