Brownie Frosting

This was just as I wanted, except a little grainy. It's very yummy and so easy. I over baked my brownies on accident and needed something to fix them, without having to bake another batch. I just can't wait to serve them this evening!

Black Bean and Corn Quesadillas

Extremely yummy for so little ingredients. I added some garlic anD sautéed with onion. We ate them on fresh and easy's jalapeño and cilantro tortillas. I baked them for 10 minutes and then seared them on a skillet for a minute on each side. This prevented all the stuffing. To fly out when flipping. .

Creamy Chocolate Frosting

The chocolate flavor was okay. I do not like dark chocolate flavor, so I melted 1.5 oz of milk chocolate with 1/2 tsp of butter. I mixed this into the frosting and viola, yummy chocolate frosting. I didn't want to add more sugar and this work out perfectly. Yummy!!!

Eileen's Spicy Gingerbread Men

We add a little extra spice because we like it really spicy. Great cookie, used it three times already this week. Unfortunately, you have to bake it for an extra 10 minutes to use for making a house. The extra baking makes it taste icky, but it held up really nicely.

Rice Pudding (Kheer)

Do not add more rice to try to thicken this dish. Kheer is supposed to be thin and runny. I have had it at many indian restaurants, and this recipe almost identical. A little less sugar and 1/2 cup coconut milk and this would be perfect!

Pumpkin Apple Streusel Muffins

I make this muffin every fall, and everyone I know begs for more. I change a few things to make it a little healthier and less calories. I use 1/2 whole wheat flour, 1/2 all purpose. I use 2 cups applesauce and 1/8 cup oil. Applesauce is just easier! I also use egg beaters instead of whole eggs. All in all a very tasty treat!!!!
