Cornbread Dressing II

I made this yesterday. I did make a couple of small changes. I used my recipe to make the cornbread and only used 1 can of chicken broth plus an equal amount of homemade turkey broth. I also added 3 chopped up boild eggs. Turned out nice and moist and very tastey. I also ommited the sugar in my cornbread because this dressing needs to be savory not sweet. I did add sage about 3/4 teaspoon.

Pound Cake III

I bake breads all the time but have never tried a cake. I used the ingredients in the amounts listed except I used all butter (no shortening) and I followed the directions given by "CARTHECOOK" in her review. I just used regular milk (not soured). My Oh My! What a great airy pound cake!

High Temperature Eye-of-Round Roast

I am sorry but this cut of meat will never be tender. I have tried this recipe twice. Thinking a miracle would happen the second time. But no. I used the exact times and temps for the weight of roast (Choice Angus) that I had. I used olive oil, sea salt, fresh ground pepper and garlic for the rub. Let the roast sit for 20 min. before slicing thin. Nice taste but will never be tender.

Homemade Tomato Sauce I

It only takes 10 seconds or so for tomatoes plunged in boiling water to remove the skins. Don't boil for one min. The ice water bath is recommended. I have been skinning tomatoes for years and 1 min. is way to long unless you want to cook them.

Terry's Texas Pinto Beans

These Pinto Beans turned out very good. I had to change it up by using items I had on hand. I soaked my beans overnight and I oven roasted the Jalapeno pepper before chopping. Used Beef Broth. I did not have Chicken Broth, the green salsa or cumin so I used 3 Tablespoons of Fiesta brand Pinto Bean Seasoning and also added some Smithfield smoked Pork Jowl Bacon. Served as a side along with grilled chicken and fresh baked corn bread. Yum! My wife even liked them and she usually does not eat beans.

Chef John's Creme Fraiche

Ultra-pasteurized heavy whipping cream works just fine. I use it exclusively and it has never failed to make great Creme Fraiche. Don't waste your time looking for pasteurized. I use Ball canning jars to make this great sour cream in and will never buy another plastic tub of it.

Rich and Creamy Beef Stroganoff

This recipe just called out for using left over Chuck Roast that had been braised tender in red wine and beef stock the night before. I also used Chef John's Creme Fraiche recipe from this site instead of sour cream. Since the beef was already cooked and tender all I had to do was slice and add it to the onions, garlic, mushrooms and sauce leaving out the red pepper flakes. Served over homemade egg noodles. My wife loved this meal better than the Braised Chuck Roast w/veggies we had the night before. A keeper for left over chuck roast!

Au Gratin Potatoes

My wife and I really like this recipe. I use this instead if mashed potatoes as a topper to my Shepard's pie VI (from this site). I cut the recipe in half and use cream of celery soup and cream of mushroom soup ( save leftover soups in a Ball mason jar in fridge). I leave out the green peppers and onions because I put onions in my Shepard's pie. Using this recipe is much easier than the mashed potato topping called for in the Shepard's pie recipe and very Tasty!
