Au Gratin Potatoes
My wife and I really like this recipe. I use this instead if mashed potatoes as a topper to my Shepard's pie VI (from this site). I cut the recipe in half and use cream of celery soup and cream of mushroom soup ( save leftover soups in a Ball mason jar in fridge). I leave out the green peppers and onions because I put onions in my Shepard's pie. Using this recipe is much easier than the mashed potato topping called for in the Shepard's pie recipe and very Tasty!

Rich and Creamy Beef Stroganoff
This recipe just called out for using left over Chuck Roast that had been braised tender in red wine and beef stock the night before. I also used Chef John's Creme Fraiche recipe from this site instead of sour cream. Since the beef was already cooked and tender all I had to do was slice and add it to the onions, garlic, mushrooms and sauce leaving out the red pepper flakes. Served over homemade egg noodles. My wife loved this meal better than the Braised Chuck Roast w/veggies we had the night before. A keeper for left over chuck roast!

Chef John's Creme Fraiche
Ultra-pasteurized heavy whipping cream works just fine. I use it exclusively and it has never failed to make great Creme Fraiche. Don't waste your time looking for pasteurized. I use Ball canning jars to make this great sour cream in and will never buy another plastic tub of it.
