Sam's Famous Carrot Cake

Delicious cake. I made it just like the recipe said except using pecans instead of walnuts because I didn't have them. I don't think I would change anything about it, really. Great recipe! I topped it with "whipped cream cheese frosting", which was excellent.

Empanadas

Good recipe. The only thing I think would make the recipe easier would be to toss the empanadas in cinnamon and sugar before baking because it doesn't want to stick very well to the cooked dough, and I like them COATED! For filling I cooked down some finely chopped apples with some sugar, cinnamon and a teeny sprinkle of nutmeg and clove. I also made a caramel sauce to dip them in. Delicious!

Whole Wheat Zucchini Herb Bread

Perfectly flavorful. I used dried basil (1 1/2 tsp) instead of fresh and added a tiny bit more oil. Will be making this again for sure!

Banana Bars

Sooo good! Easy and turn out wonderfully! I used all butter, rather than shortening, and 1/2 cup of brown sugar. That is what I would prefer each time, but this time I also had to substitute maple syrup for vanilla and orange juice for the lemon juice because I didn't have either. They were rich and delicious.

Ginger Rhubarb Crisp

Peppermint Meringues

The recipe/directions alone I would probably give 3 stars. With just adding about 1/4 tsp. of peppermint extract I would give them 4 stars. Also, the meringues can be much prettier by just piping them through a baggie. Nothing to difficult. I used Andes peppermint baking chips that I had on hand instead of candy canes, and I added just a couple drops of green food coloring. That turned out fine.

Zucchini Brownies

I followed the recipe exactly but used a canned cream cheese frosting. My brownies did turn out cakey (without adding an egg) but they were very moist and tasty. I thought they were a little bland plain, though. Not sweet or chocolatey enough maybe. So i pokes holes in the top and drizzled just a little caramel sauce over them and let soak in before frosting with icing. Delicious! I would definitely recommend adding some chocolate chips to the batter.

Potato Chip Cookies VI

I don't think these cookies would have been as good if I did not make some changes. I used half unsalted butter and half shortening. I did not use nuts. I also added chocolate chips to some and butterscotch chips to the rest. The chocolate chip ones were best. I would give 4 stars with the chocolate chips. This definitely makes a chewy cookie!

Sunday Morning Lemon Poppy Seed Pancakes

These are pretty good. Definitely something different. My batter turned out a little runny and made flat pancakes at first, so I added a little flour and they were just fine. A healthy alternative to lemon poppy seed bread. Tastes great served with blueberry syrup.

To Die For Blueberry Muffins

Great muffins! For the base muffin I didn't make any changes except frozen blueberries and I too used brown sugar for the topping. After baking, I decided I wanted a strudel topping, but they were still delicious without it.

Not too bad. Definitely a different combination. I thought it was a little better with some black pepper, and maybe a tiny pinch of garlic. Try this recipe if you're looking for something unique.

Homemade Pancake Mix

Delicious! I did think about adding ground flax seed like another reviewer said but forgot when I made them. I made the whole batch and froze them. I added 2 tsp vanilla and only used 2 eggs and about 4 cups of milk for the whole batch. My pancakes turned out thick but fluffy. I made plain blueberry, chocolate chip, and apple cinnamon walnut. All very good, even plain!

Apricot Twists

These were pretty good. I substituted apricot preserves with peach and used cinnamon instead of mace and sprinkled a little bit of cinnamon and sugar on top after brushing on the milk. The secret is to keep the dough as cool as you can to make a stiff spiral.

Banana Cream Cheesecake

Delicious! Softer/mushier than baked cheesecakes usually are, which is how I like it. I used graham crackers instead of vanilla wafers because that's what I had available. Like another reviewer suggested, I used the banana butter icing recipe on this site as topping to avoid the unflavored gelatin and heavy cream. I will be making this again!

Decorator Frosting I

I love this frosting. It always turns out and is never runny and no having to buy expensive whipping cream that goes old in the fridge. Doesn't taste too sugary sweet and plenty fluffy, yet it holds it's shape. Thanks for the recipe!
