Risotto with Sun-Dried Tomatoes and Mozzarella

The entire family raved about how good this was! I did find that I needed more broth than what was called for (I used about 1/2 cup extra), and I used smoked mozzarella instead of regular. This was my first attempt at risotto, and although it's time consuming, the results were well worth the time spent. I will make this again.

Garlic Butter

This was absolutely delicious! I made this to go on a loaf of storebought Italian bread, and the family raved about how good it was! I did 1/2 tsp of garlic powder instead of garlic salt, as the Parmesan made it salty enough. A couple of days later I added a bit of the leftover spread to some canned green beans, and there were no leftovers. I will definitely make this again!

Banana Banana Bread

Best banana recipe ever! I added some brown sugar on top just before baking, and it really takes this bread over the top in deliciousness!

Blueberry Cream Muffins

My entire family loves these muffins, including my mother-in-law who usually isn't fond of blueberries. I use half white sugar and half brown, mix the sour cream in with the rest of the wet ingredients until smooth, and add a bit of lemon juice to brighten the flavor and cut down on the sweetness. They always rise beautifully while baking!

Almond-Crusted Tilapia

This is the best fish recipe I've ever made. Everyone in my family loves it, including my father-in-law who ordinarily doesn't like fish, and my 4-year-old daughter. The only changes I made to the recipe was the seasoning: I used one tsp lemon herb seasoning, 1/2 tsp garlic powder, and 1/2 tsp pepper since I don't have lemon or garlic pepper on hand. I also mix it with the dredging flour rather than the beaten egg. As another reviewer mentioned, cooking on medium at 3 min. per side was plenty of time, and you still get a crispy coating. I've used this recipe with tilapia, swai, and pollock, and it's been terrific every time. Delicious!

Broiled Tilapia Parmesan

Other than substituting regular salt for the celery salt (I didn't have any on hand), I followed the recipe exactly and the results were disappointing. The taste of the mayonnaise overpowered everything, and not in a good way. I won't be making this again.
