Banana Split Cake IV

I have used this same recipe with one alteration. It is easier and less fattening. Rather than making a graham crust, just place a lyer of graham crackers in the bottom of the pan and make a day ahead and refridgerate. This dessert is also a great make ahead and freeze for unexpected social events. Love it!

Gluten-Free Irish Soda Bread

Tried this and was not impressed. Will try a different type of G.F. flour mix like fava bean next time and see if it improves. Seemed very rubbery.

Iron Range Pot Roast

I made this today and it was everything I remember from when I briefly lived on the Iron Range in northern Minnesota. My pork roast was 7.5 lb. so I doubled the spices and used whole fennel which I prefer. My butcher was nice enough to de-bone the shoulder roast, so I seasoned it and tied it myself. Thank you for sharing such a great recipe.

Dutch Apple Cake

This is a wonderful dessert. Due to my husband's wheat allergy I made some changes to make it without eggs. dairy or wheat. I used egg substitute, soy milk and gluten free flour mix. I used brown sugar for white and cut up a small apple fine dice to add to the cake. We also love cinnamon so put 1/2 tsp and 1/4 tsp ginger and cloves in it. I put the sliced apples and cinnamon/sugar mix on top artfully and baked for all of 50 minutes. Make this for your gluten free friends, it works great. Served with rice ice-cream and didn't miss a thing. Yummmm..........Thankyou Carol for sharing.
