Cheesy Ham and Hash Brown Casserole

This is really good. I decided to make a meal out of it and added green peas, green onions, sauted mushroom and sauted onion and garlic. Served it with a salad and the husband loved it.

Eggplant Parmesan II

I was so worried that this was going to taste awful, but it was delicious. I did sweat the eggplant for 30 mins and then rinse with water. I agree with another reviewer that 3 eggplants was way too much. I ended up using two medium sized eggplants. I also cooked the eggplant longer 10 minutes on each side. I will definitely make this again!!

Breakfast Casserole

This was so quick and easy. I didn't bother cutting the crust off the bread. You could easily veggies to this basic recipe. I added half a bag of baby spinach and chopped up a tomato I had laying around. A great quick Saturday morning breakfast.

Chipotle Chicken Salad

I am usually not a chicken salad fan, but this was great. I like the spice. I made chicken salad wraps with avocado. The avocado is a great compliment to the spice.

Black Magic Cake

This cake is so easy and delicious!! I made this for family birthdays. I iced it with a chocolate cream cheese icing and topped with chocolate covered strawberries. It was very moist and not too rich.

This is a really good weeknight meal. I usually cut the chicken breast in to smaller strips to help with eating, and to cut calories I have skiped on the breading at times. Great flavors!

Spinach Pasta Salad

This is a simple basic pasta salad recipe. You can add any veggies you have on hand to change this up. I usually throw in something extra veggie wise. Make with your veggies of choice, but I would not leave out the spinich!

Bacon Wrapped Hamburgers

I love this burger recipe!! I first made these to bring to a friend's Labor Day BBQ. They were so good and juicy. I have made them many times since, and they always get rave reviews. This is my go-to burger recipe!

Peach-Basil Sangria

I really wanted to like this, but the peach taste was so overwhelming. I left out the added sugar to start, and I still thought it was too sweet. I wanted to taste basil, and it just wasn't there. This sounds good, but the recipe is off. I may try to work with it to get a taste I like.

Spinach Chickpea Curry

I took the suggestions of other reviewers and cooked the tofu in a 425 degree oven for 30 mins. I also added a can of drained diced tomatoes and fresh garlic. I threw in a few more spices including tumric and cummin. This was so quick and easy and tasted great. You really couldn't even taste the creamed corn. However, I would suggest reading your cans carefully, because lots of creamed corn has too much added sugar. I went with the can with the lowest sugar content (as there is already enough natural sugar from the corn).

Easy Pesto

Excellent recipe. I used lots of basil from my garden and made two batches. I placed the pesto in ice cube trays and froze then popped out and individually wrapped each cube and put all the cubes in a bag in the freezer. I use these all fall and winter as single serving pesto, in sauces, or as spreads.

Stuffed Eggplant with Shrimp and Basil

I followed the directions, but added one small diced onion and 3 diced cloves of garlic to the oil with the eggplant. I also mixed in one diced fresh tomato at the end before stuffing and baking for color and freshness. This is very good and very much like the stuffed eggplant at the Red Bar in Greyton Beach, FL.

Peach Cobbler VI

I made this with fresh peaches from the farmer's market. I added 1/4 c. sugar to the peaches and added the cinnamon to the peach mixtue instead of on top. I also put the peaches on the bottom and jostled the whole mixture around a bit to have some peaches on top some on bottom. This was so delicious and not too sweet.

Mushrooms with a Soy Sauce Glaze

This was a great way to use up a bag of presliced mushrooms that were a bit past their prime. So quick, easy and tasty. I did also add a small diced onion in with the garlic. Great with steak from the grill.
