About this Cook
I'm a 33 year old, single attorney. I love cooking and entertaining. I have gotten better at cooking for one over the years, but I really love to cook dinner for my friends. I also like to camp, and have tried to invent great new camping meals.
My favorite things to cook
I love fresh vegetables and finding new ways to cook them. I also love trying new fish and seafood recipes. I can cook a mean traditional southern Sunday dinner with all the fixings.
My favorite family cooking traditions
My Mom makes a fantastic Thanksgiving Dinner. We always wake up on Thanksgiving morning, and I help cook the dressing. I have been the official dressing taster since I was six or so. I have tried to recreate some of her recipes and it has taken me several tries to get them right, because she doesn't measure anything and doesn't use recipes. She is my cooking inspiration.
My cooking triumphs
My biggest cooking triumph is not really a single dish, but when I reached the point in my cooking career where I could invent my own recipes. The first time I made up a dish for a dinner with friends and someone asked for the recipe was one of the most exciting and rewarding moments ever.
My cooking tragedies
I am notorious in my family for the "fried pasta incident." We always have an appetizer dinner on Christmas Eve in my family. My sister, Mom, and I like to try new appetizer dishes every year. I found a recipe for what sounded like very tasty fried pasta. It was everything but tasty. It came out hard like uncooked pasta, and terribly seasoned. Every Christmas Eve since my Mom and sister remind me of the "fried pasta incident." I will never live it down.

Pizza Casserole
This is a good quick easy meal and it freezes well. You can add any toppings that you like on pizza.

Cheesy Ham and Hash Brown Casserole
This is really good. I decided to make a meal out of it and added green peas, green onions, sauted mushroom and sauted onion and garlic. Served it with a salad and the husband loved it.

Eggplant Parmesan II
I was so worried that this was going to taste awful, but it was delicious. I did sweat the eggplant for 30 mins and then rinse with water. I agree with another reviewer that 3 eggplants was way too much. I ended up using two medium sized eggplants. I also cooked the eggplant longer 10 minutes on each side. I will definitely make this again!!
