Bean Quesadillas
Makes a great lunch. I like that it's super easy! I did make a few changes. I used a can of corn and a can of petite diced tomatoes. I also seasoned the mixture with cumin, chili powder, cayenne pepper, and season salt. I made it for a group of meat eaters and everyone agreed we should add to our rotation of meals.

Blackberry Cobbler II
Great Cobbler. I made a few changes. I added 1/4 tsp cinnamon to batter and berries. I wish I would have doubled the topping (I will next time). I boiled the berry mixture in a sauce pan than transferred it to an 8x8 glass baking dish. Baked it uncovered 25mins. It made the house smell so good! Everyone loves it. I'm considering making just the berry mixture and putting it on cream cheese and serving it with crackers. I think it would be excellent.

Baked Parmesan-Crusted Chicken
I chose this recipe just to try something new. My family enjoyed it. I think it was good but not great. I didn't use fresh herbs which I'm sure makes a difference. I'm sure I'll use it again when I need something quick and easy.
