I am 31 years old, and work as VP of Corporate Field Sales for an observational marketing research company. My husband and I have been enjoying settling into our new home and looking forward to the birth of our first child (due March 5th!) In my spare time I enjoy cooking, decorating, running/biking/working out, spending time with my family and friends, and art/music. I am an intermediate cook interested in trying new recipes that are quick and fairly healthy!

Slow Cooker Buffalo Chicken Sandwiches
This was really good and so easy. My husband loved it and said he might put a special request in for it on a game day. I followed one of the other reviewer's suggestions and mixed some coleslaw mix with blue cheese dressing to put on top which really added something! I will definitely make this again.

Slow Cooker Carnitas
This was excellent....easy and extremely flavorful. I followed my mom's (Naples 34102) recommendations in that I doubled the spices, left the cinnamon out, and put the meat in the oven afterwards for a bit to crisp it up. I prepared this meal "Burrito Bowl" style for those who are familiar with Chipoltle and Qdoba restaurants. I made a cilantro lime rice with butter, and then layered it with seasoned pinto beans, the carnitas, fresh homemade salsa, fresh chopped lettuce, shredded Jack cheese, and sour cream. Both my husband and I thought this was every bit as good as a restaurant's "Carnitas Burrito Bowl", only MUCH fresher tasting! We are looking forward to eating the leftovers tonight!

Buttermilk Mango-Berry Crumb Cake
I'm Naples' daughter and it's about time I tried my mom's recipe! Maybe I'm a little biased but this was excellent, just as I knew it would be, having grown up with the benefit of all her awesome cooking and baking! Nice and moist, fruity and flavorful, with a delicious crumb topping that's just a little different than most. I'm not as experienced as Mom is, of course, but her recipe is easy to follow and turns out a great finished product!
