I have tried every recipe known, and this one is the best by far. Only changed one thing, this time I used whipping cream instead of milk. It wasn't heavy, just regular, and it came out perfectly. I like a recipe that uses flour instead of corn starch which always has an after taste to me, I just don't like it. Well, I'll stick to this one for coconut as well. If anyone wants a lighter pie, fold some unsweetened whipped cream into the mixture.
For those finding it runny, you're not allowing it to cook fully. If you have an insta read thermometer, make sure it reaches at least 160 degrees or higher, or it coats the back of a spoon really well. Then make sure to refrigerate several hours, it will thicken.
