Kitty Litter Cake

I have been wanting to make this cake for ages. I substituted banana pudding and banana cake for the white/vanilla options and I think it added a lot to the overall taste. As with the other reviews, the final result was just too realistic for most people to be willing to try it, so in the end I had to throw away most of it! So if you feel badly about throwing away food, you might want to make something else. But if you making it just for shock value, this is your recipe!!

Sweet Potato Souffle III

This turned out very well indeed! A few things I tweaked were: used evaporated milk instead of regular milk, I used brown sugar instead of white sugar in the sweet potato mix (and used a bit less than a full cup), and I seasoned it up with a good dose of cinnamon, nutmeg, and all spice. I think I'll use even less sugar in the sweet potatoes next time because it really doesn't need it. But this recipe is definitely a keeper!

Cooking Light magazine's Mexican Chicken Casserole

What a wonderful comfort food! I ended up using lean pork loin instead of chicken, and added some sliced zucchini and chopped cilantro (both added to the onion). Like others, I adjusted the number of corn tortillas, but that was it. It was very tasty, and even my 4 year old son ate it! I'll definitely be making this again and again... (I might even replace the meat with thickly sliced portabello mushrooms to make it a vegetarian dish...)

Hot Spiced Cranberry Cider

This recipe is Fabulous! I made this for friends last night and everyone loved it. I have to admit that played a bit loose with the ingredients (didn't measure the cranberry juice, forgot the lemon), and it still was WONDERFUL. I plan on making this all winter long! Thanks!!

Mandarin Orange Cake I

I used orange supreme flavour cake mix, and pistachio pudding for the frosting (suggested by someone else's review) - and it was a big hit at my son's birthday party. Very moist! The frosting tasted like ambrosia salad! Will definitely make again!

Wonderful! Very fast and very tasty! I left out the sugar, and my husband & I thought that they tasted very authentic. I forgot to brush with egg and water, and they still were great! I'll be making these regularly from now on!

I've used this recipe 2 Easters in a row, and it has always gotten raves. In fact, because I can make 3 decent-sized loaves from this recipe, my mother and my aunt now expect that I'll be making the Paska!

Magical Mint Kiss Cookies

These are marvelous - pretty much chocolate shortbread with a chocolate surprise inside! I agree with the other reviewer who suggested that the butter be VERY soft - I accidently over-microwaved the butter so it was practically liquid, but in doing so the dough was extremely pliable, no dryness problem here! I decided to forgo the powdered sugar, and instead drizzled coloured icing over them. I liked these so much I am making them with mint (with green icing), hugs (white icing), and almond kisses (red icing). :-)
