Chef John's Lemon Bars

These lemon bars are fantastic! I have made a couple of changes to the process of making them though. I have a really hard time with trying to mash the butter with the flour, so I cut cold butter into the flour with a pastry blender instead, and when I have a crumbly texture I add the other crust ingredients and I work the dough with my hands until I have the slightly crumbly cookie dough texture. I have found the baking times to be too long. I bake the crust for about 18 minutes and then the whole bar for 20-22 minutes. I have baked these using convection and not, and I find the regular setting is actually better. The other change I usually make is to double the recipe and bake in a 9x13 baking dish because they are so delicious!

My Canadian Friend's Bean Soup

Excellent! I cooked the onion, garlic and sausage in a pan and then put everything into a crock pot and let it simmer for about 4 hrs. I did double the amount of chicken broth and I served over pasta, which I cooked separately. Really satisfying, tasty meal.

Cottage Dill Bread

One of the best breads I have made with my bread machine. Excellent flavor and texture. I used butter instead of margarine and dill weed instead of dill seed and like others suggested used 1.5 teaspoons of yeast instead of tablespoons.

Buttery Corn Bread

Excellent cornbread! Delicious and great texture. I used to make a different recipe on this site but found that leftovers got quite sticky, which is not a problem with this one. This recipe can also be cut in half and made in a 9x9 pan.

Turkey and Quinoa Meatloaf

I thought this was just okay. I cut the hot sauce down for my kids and still found it to be too spicy. Maybe I will try again with BBQ sauce instead as some other reviews suggested.

Grandma's Banana Bread

Awesome! Really nice fresh banana taste. Very moist and when it was fresh had a very nice crisp top (after 1st day got a little mushy but still tasted great). The only changes I made were that I halved the recipe and made in a 9x9 glass pan and used butter instead of margarine.

Steakhouse Wheat Bread for the Bread Machine

Followed the recipe exactly. The loaf came out a little strange looking...sort of lopsided. I am not sure if it was because it just wasn't enough dough for my machine (which is supposed to do anything from 1-2 lbs) or that the dough was much gloppier than others so it didn't form the nice loaf it usually does. Regardless, it tasted really good, the texture was fine once baked, and everyone in the family enjoyed it!

"Pantry Raid" Chicken Enchilada Casserole

Really yummy! I cut down the amount of chili powder to make it more kid friendly and used my favorite home-made cornbread batter (Buttery Corn Bread from this site) instead of a mix. I don't know if it was because I used a homemade cornbread, but it took much longer to bake than 1/2 hr. I ended up raising the temp to 400, cutting slits in the cornbread topping to let the heat in better, and covering it since it was getting too brown on top.

Satiny Chocolate Glaze

Delicious! Instead of using a double boiler I just microwaved the butter, chocolate and corn syrup, stirred until it was melted and then added the vanilla. I put this on the Chocolate Cavity Maker Cake from this site...awesome!

Chocolate Cavity Maker Cake

This is the best chocolate cake I have made. I didn't have Kahlua, so I used a shot of espresso combined with enough milk to make 1/2 cup. It was done for me in 55 minutes. Topped it with the Satiny Chocolate Glaze from this site. Absolutely wonderful!

Michigan Chicken Salad

I have been trying various chicken salad recipes from this site over the summer and this one is by far my favorite one. The only thing I changed was I cut down to 2 tbs of Dijon mustard per other reviews, but I think it would be fine as written too.

Fresh Peach Pie I

Awesome pie! I did find the directions a little confusing in terms of how many peaches I needed (i.e. do I use 2 cups of cut peaches and then mash them or use 2 cups of mashed peaches). So, I used 2 cups of mashed peaches (which was 4 peaches) and 4 cups of sliced peaches (each peach yielded about a cup). The only change I made to the recipe was instead of layering the peaches and glaze, I just stirred the glaze and sliced peaches together. The pie set up perfectly and was delicious!

Slow Cooker Beef Stew III

I am not a beef stew fan, but my husband is and I make a slow cooker meal at least once a week, so I figured why not give it a try. This was delicious! I cooked for 12 hrs instead of overnight, but otherwise followed the recipe as written.

Melt-In-Your-Mouth Meat Loaf

This recipe is great and so easy! Even my very fussy toddler loves it. I have used both ground beef and ground turkey and either works just fine, though my preference is for the turkey.

I really enjoyed this soup! Great taste and very satisfying with all the veggies. The one change I made to this recipe was that I cooked it in a slow cooker. I sauteed the garlic and onions in olive oil, threw that with everything else (except pasta and cheese) in a slow cooker and cooked on low for somewhere between 6-8 hrs. I boiled the pasta separately and added it to the soup before serving.

Maple Muffins
