Eggplant Parmesan I

I am not much of an eggplant eater. My husband thought this was good. A friend gave me a few from her garden and I did not want them to go to waste. The eggplants were small (3). I did do the sweating process then I roasted the slice eggplants as others suggested. I did not have enough eggplant to layer as the directions stated. If I make this again I will make sure I have enough Eggplants.

Meatloaf with Fried Onions and Ranch Seasoning

The meatloaf came out great, the meat was moist. This was easy to prepare. I did diced some green pepper, fresh garlic, onion and sautéed them in a pan, then added them to the rest of the mixture. I also did not have any of the dry Ranch dressing mix, so I added Ranch dressing instead as another reviewer suggested.

The Best Mashed Potatoes

Classic Peanut Butter Cookies

These cookies are awesome!!! The hubby love them. I just baked a few and froze the rest of the dough. Now when we want peanut butter cookies, my husband or I can just slice some off and bake them. Thanks Shirley for the recipe for some great tasting cookies.

Baked Spaghetti I

I made this tonight for dinner. My husband loved it and had asked me to make this again, but for me and my daughter, it was different, but good. I guest I am used to making spaghetti the regular way with spaghetti sauce and not soup. The only think I did different was that I added Italian sausage to the ground beef. I really seasoned the meat when I was browning it, so that it wouldn’t taste bland, as one review stated. The next time I make this I will use spaghetti sauce.

Tasty Collard Greens

I made these last night for dinner. I have been cooking my greens this way for years, but instead of the Turkey drumstick, I normally use ham hocks. This time I put a twist on it by adding a bunch of mustard greens and the greens still turned out very delicious. My husband and daughter could hardly wait for them to finish cooking. I think, I will continue adding mustard greens to the bunch; it seems to bump up the flavor.

Awesome Slow Cooker Pot Roast

I made this last night for dinner, and my family and guest love it!! This was very delicious. The meat was so tender and the gravy was very flavorful. I did make a few changes, instead of 1 ¼ cups of water, I used 1 cup of water, ¼ cup of red wine, and 1/3 cup of beef broth, I also add garlic power and a little season salt to the liquids. I tenderized and then marinated the meat with black pepper, and some beef seasoning, then stuck it in the fridge for about 30 minutes. I then took the meat out, and let it get room temperature. I then seared the meat by heating an iron skillet with some olive oil, adding flour to the meat. I sliced up some onions and carrots and placed some under and some on top the roast. I then pour the liquids over the meat. I did not have time to cook it in the slow cooker, so I put it in the oven and it came out perfect. I will definitely make again!!!! Thanks Brenda for sharing!

Bacon-Wrapped Potatoes

I agree with one other reviewer, the bacon didn't give any flavor to the potatoes. Potatoes on the grill are good, but this didn't do it for me.

Classic Vanilla Buttercream Frosting

I used this frosting along with the Black Walnut Cake (from this site). The frosting taste great, a bit runny, most likely it was something I did wrong. I have never made icing like this before, but I will make this again. The next time, I will not use as much butter as the recipe states.

Black Walnut Pound Cake

I had some black walnuts so I decided to give this recipe a try, and……….wow! It came out so moist and tasty. I used the “Classic Vanilla Butter Cream Frosting” (from this site) which was a good combination. I will make this again.

Broccoli Rice Side Dish

I love me some broccoli and this dish was great!!! I had this at one of those all-you-can-eat restaurant but theirs did not have the fried onions, but this taste just like it came from the restaurant. The only thing I would do the next time is add more cheese. I will definitely do this again, and this is a keeper.

Baked Pork Chops I

I am not much of a pork eater; but these were good, and my family loved these. What a new welcoming change from the way in which I would normally cook pork chops which was fried or bake(but not this way). I seasoned EVERY layer; the pork chops, the flour, and add more seasonings to the bread crumbles. The pork chops came out moist and full of favor. I will definitely do this again.

Roast Chicken with Rosemary

I made this for dinner last night and it was great. As suggested by one reviewer, I wrapped the chicken in plastic wrap and refrigerated it overnight. The chicken was extremely tender delicious, and moist. I will make again.

Gravy Baked Pork Chops

Carrot Cake III

I am not a baker and this was my very first cake that I made from scratch and it came out very moist and delicious. I took the advice of others to cut some of the oil and substitute it with apple sauce and it worked out great!!!!. I will definitely keep this and will make again.

North Carolina-Style Pulled Pork

I used a 8lb pork shoulder, just because it was on sale. I followed the recipe and it was It was delicious! The next time I will used a pork butt, couldn't pull the pork shoulder meat so I had to mince it.

Easy Tuna Casserole

This recipe WAS easy and delicious!!!! The hubby and I really enjoyed this one. I took the advice of others and added a bit of mayo and some half-and-half and it turned out great, wasn't dried or anything. I can see myself making this over and over. Thanks for the recipe!!!
