Perfect! A cupcake, that is pumpkin! Light, airy, moist. For High Altitude, add 1/4 c. flour.

Easy OREO Truffles

Reviewed: Dec. 10, 2010
Awesome! So pretty and so rich. I chilled the oreo mixture overnight, used a cookie scoop to get the same amount each time and it was so easy. These will be staples at wedding and baby showers I host, as well as Christmastime.

Zucchini Pizza Bake

Reviewed: Aug. 30, 2010
Not great. I thought the crust would be crispy and golden. Instead it was soggy. WAY too much cheese in the crust. Maybe would be better adding very little cheese to the zucchini crust. Tasted like stuffed peppers, but not as good. Very disappointing.

Brooke's Best Bombshell Brownies

Reviewed: Aug. 24, 2010
Cooked this exactly as written, in Cheyenne WY, which is over a mile above sea level. They still came out amazing. This is now my brownie recipe. Couldn't be better!! Trust this recipe!

Marmalade Pork Tenderloin

Reviewed: Aug. 18, 2010
Great flavor! Not overpowering but added a nice zing to the moist tenderloin. I served it with roasted potatoes and broccoli. Everyone enjoyed it!

Strawberry Dream Cake I

Reviewed: Jul. 14, 2010
I warmed my cream cheese in the microwave before adding it to the batter, and even so there were tiny balls of cream cheese in the baked cake. The icing was very yummy but the cake itself was not good at all. I followed the recipe exactly and could barely taste any strawberry flavor in the cake. Very disappointed in this.

Baked Potato Soup V

Reviewed: Feb. 3, 2010
Excellent, Restaurant quality! If you like it a little less thick, just stir in more milk before serving and heat through. 2% is just fine, and I see no need for the sour cream. This is a keeper!!

Oatmeal and Wheat Flour Blueberry Pancakes

Reviewed: Feb. 1, 2010
So good! Great texture and appearance. I used 2% milk and I also added vanilla to the batter. I really enjoyed these, especially knowing they are healthier than the all-white flour versions.

Green Bean Stir-Fry

Reviewed: Jan. 4, 2010
Great recipe! I used frozen green beans and it turned out just fine. Instead of cooking them in oil I simply steamed them with a little water. The sauce was a little sweet for my liking so I added a little extra soy sauce. But the pb/soy combo was delish!!

Cheese Garlic Biscuits II

Reviewed: Nov. 11, 2009
These biscuits were amazing. The butter in the dough makes them so yummy and moist, much better than the basic bisquick recipe. I froze half of them and they thawed beautifully.
