Slow Cooker Spicy Black-Eyed Peas

Had I felt led to give this recipe a lower rating I would not have posted since I feel it is unfair to give a low rating when you do not follow the recipe as posted. However, this was a hit and even though I made a few adjustments I am still posting a solid 4 star rating. What caught my attention was the slow cooker cooking method and not so much the spiciness. Not being a fan of spicy, I omitted the jalapeno (and the red pepper). I also used canned chicken broth instead of the bouillon. Otherwise I stuck with the recipe and the preparation/cooking method and thought the peas turned out great! The addition of the ham and cumin really gave a great smoky flavor. These were a wonderful addition to my New Years Day meal.

Easy Corn Casserole

Oh my goodness, this was delicious! Even my husband (who doesn't usually care for corn) enjoyed it. Loved the addition of fresh chives... gave great flavor. I feared the onion salt would make the dish too salty so I used onion powder instead (and did not need to add any salt at all). I did feel that the ratio of cream cheese to corn was a bit much so I increased the amount of corn. That's just a personal preference, though. Oh, and I did use frozen vice canned corn. Again, just a personal preference - didn't change the taste or consistency of the dish at all. Making this last night was a "trial run" since I hoped to be taking this to a Thanksgiving dinner. I was so pleased with the result that I will *definitely* be making this for Thanksgiving! Thanks so much for sharing your recipe, PPERRY0501.

Porcupine Meatballs

These are a trip down memory lane for me as my mother made them often when I was a child. I make these on rare occasion now (cutting back on red meat) and always serve with mashed potatoes and green beans. A great "comfort food" meal.

Hot Ham and Cheese Sandwiches

Very tasty! I tweaked this a bit just to suit our personal taste - nothing major, though. I used chopped chives instead of the onion (milder flavor), shaved ham instead of sliced, and mild cheddar in place of the Swiss. The spread was easy to mix up and I really liked the horseradish mustard. My husband and I both liked these sandwiches and it was perfect for a quick weeknight dinner. Fruit Dip II

Made this for a family gathering and it was a big hit! Could not be simpler to make. I used strawberry cream cheese and decided to add a dash of vanilla extract along with the marshmallow creme. So quick and easy! Served it with fresh strawberries and fresh pineapple and it was devoured. I can see this becoming a staple at any gathering. Thanks for sharing, Crystal!

Meatloaf with Fried Onions and Ranch Seasoning

Very tasty! I used the whole envelope of ranch seasoning but otherwise followed the recipe exactly. Came out moist and delicious. My husband had two servings and made meatloaf sandwiches the next night. I'd say this one is a keeper.

Alyson's Broccoli Salad

Made this yesterday for a family gathering and it was a big hit! I used red grapes instead of the raisins (it's what I had on hand) and used onion powder in the dressing instead of red onion in the salad (a matter of personal preference). The bacon and sunflower seeds added just before serving really made the dish. Everyone loved it and I'm sure I'll be making this again and again. Thanks for sharing, JJOHN32!

Baked Zucchini

Delicious side dish and so easy to assemble. Next time I make this I will either skip the parboiling (15 min was way too long and my zucchini was almost mush) or I will cut it down to 5 min. Also, while the filling was delicious, it made way too much. I used less than half for the zucchini and we used the rest as a cracker spread before dinner.

Ronnetta's Spaghetti Sauce

I have found the spaghetti sauce that I will use from now on. This was wonderful! I don't like a sauce with a lot of "stuff" in it (mushrooms, peppers, etc). Was looking for just a good basic sauce and this it IT! Love the thickness... runny sauces aren't a favorite in my house. Thanks for sharing this keeper.

Cheesy Ham and Hash Brown Casserole

I really expected to love this and I'm not sure why I didn't. Potatoes, cheese, ham... what's not to love? Unfortunately, despite the sharp cheddar and the sour cream, it seemed a bit bland to me. I really wanted to like this one but for some reason it didn't do it for me. On the plus side, it was a snap to put together and pop in the oven (even on a work day).

Laura's Lemon Roasted Potatoes

This were good but seemed little different to me than your basic roasted potatoes. The lemon and dill flavors were so mild that they were almost indistinguishable. Might increase those next time. Even though the flavors did not "pop" for me, I do love roasted potatoes so I can envision making this again and tweaking the seasonings a bit.

Greek Orzo Salad

What a delicious side dish/salad! Was looking for something to go with our 4th of July menu. I made the Marinated Greek Chicken Kabobs (from this site) and this salad was the perfect accompaniment. I served it warm instead of cold. Next time I might add more lemon juice for even more tang but it's great as-is. The marinade from the artichoke hearts gave great flavor, too. Broccoli Casserole I

This was neither a hit nor a miss at my house. The taste was okay but I was not a fan of the consistency. It seemed a little mushy, possibly due to the instant rice. If I make this again I'll use a firmer, regular rice - and possibly broccoli florets instead of the chopped broccoli.

Mom's Lasagna

Delicious! I doubled up and made two pans of this for a family gathering and it was a huge hit. I used no-boil noodles to save time and it was a cinch to put together. Then 10 minute sitting time is a must. Everyone had second helpings and raved about it. This is a keeper!

Lemon Cream Pasta with Chicken

Delicious! I was a little hesitant about the cup of cream (I can hear my arteries hardening LOL) but it really made the sauce. Loved the fresh lemon flavor. I used farfalle instead of rotelle (personal preference). I could have actually skipped the chicken and just had the pasta and sauce. Can't wait to enjoy the leftovers tomorrow. Yum!

Roasted Onion Mayonnaise

Made this last night for "sandwich night." My husband loved it and I thought it was pretty good. I had to roast the onions for quite a bit longer than the 30 minutes called for. And I still didn't have the caramelization I thought I should have. Next time I will take the advice of another reviewer and cut the onion into large slices instead of halves. Otherwise this was a quick and easy recipe. I think it would be great over burgers.

Marinated Greek Chicken Kabobs

Yum! Made these for our 4th of July cookout and they were a hit. A bit messy to assemble but that was part of the fun. :) I'm not sure how much feta flavor came from marinating and it's not as if it stuck to the kabobs so next time I'll take another reviewers advice and blend/process the marinade to incorporate the feta better. We used zuchinni instead of the peppers and onions. Also served Greek Orzo Salad from this site. Dinner was delicious and I'll be making this again. Thanks for sharing your recipe, katplusgoll!

Incredibly Easy Chicken and Noodles

Yum! This is comfort food to the max. This was delicious and made a lot - had plenty leftover for lunch the next day. This was very easy to put together (just as the recipe name says) and I loved the one-pot aspect - throw everything in and heat. I think the dish would be perfectly delcious as-is but I did make a few additions. Sliced carrots and celery, some chicken base and poultry seasoning, and once the noodles were cooked I added a cup of half-and-half to make it rich and creamy. We'll definitely have this again. The Best Parmesan Chicken Bake

This was actually a 3.5 star dish for me but since I think that was due to my own variations I'm giving it 4 stars. This seems more like a "deconstructed chicken parmesan" than a true chicken parm, particularly since the chicken was not breaded and browned before baking. But it sounded tasty enough to give it a go. Flavor-wise it's a solid 4 stars. I think thatwill have a lot to do with whatever marinara/red sauce you choose since that's where the main flavor punch comes from. I used thin-sliced chicken breasts since that's what I had on hand and they were kind of lost amidst the sauce/cheese/croutons. My mistake. Next time I'll use larger chicken breasts. Also, I chose to top everything off with a bit more sauce befor epopping it in the oven. Unfortunately that made for more soggy/less crunchy croutons. But again, that was *my* mistake. One I won't make again. The flavor was great, though, so I'll definitely try this again.
