Grandma's Green Bean Casserole

This was a fantastic recipe! A lot better than the usual Campbell's soup recipe. I live abroad and was asked to bring a dish typical of American holiday traditions to a Christmas party, so I chose the green bean casserole. I was unable to find the ingredients for the Campbell's recipe, so I searched for an alternate recipe. This will always be my green bean casserole recipe. I even suggested it to my mom, and she made a batch for Christmas too - everyone at her party loved it too! Even though I loved, the recipe didn't quite suit the taste of the Norwegians who I spent the holiday with.. Excellent recipe!

Chocolate Crinkles II

Just like my mom used to make but using coco powder instead of melted unsweetened chocolate bars. I live in a country where unsweetened chocolate bars don't exist, so this was a nice alternative for me!

Asian Roll Lettuce Wrap

It was my first time making a lettuce wrap and I must say it turned out fabulously. The sauce really makes the dish! Like some of the others I just browned the meat instead of making balls. I also just used some frozen veggies (Asian mix) instead of fresh ones since that was all I had on hand. I then mixed the meat mixture and veggies together. Will make again!

Whipped Cream Cream Cheese Frosting

Fantastic recipe! Made for use on a yellow cake topped with berries (the 4th of July flag cake). Much better than the traditional Cool Whip topping. Had to search for a different frosting as the country I'm currently living in does not sell Cool Whip. Everything turned out perfectly and it set up nicely in the fridge. No problems with lumps. Added a little extra vanilla extract to the whipping cream. The recipe makes quite a bit of frosting, so we have been dunking strawberries into the excess frosting.

J.P.'s Big Daddy Biscuits

Just made these biscuits to go along with a creamy soup for dinner tonight. They turned out exactly as I had hoped! I followed the recipe exactly but didn't use as much milk as required. Still, my dough was a bit wet, so I added some more flour. Baked them for just 10 minutes and they were perfect. Yielded about 7 rolls. From start to finish, this maybe took me 30 minutes. Thanks for the simple recipe! (P.S. They taste almost exactly like the biscuits from KFC).

Simple Scones

I just finished making these scones, and they were fabulous! I made them plain (without any raisins or other optional ingredients) and they were still lovely. I'm unsure why people are pulling out their food processors for this; I just used my pastry cutter and refrigerated butter (not frozen). I look forward to seeing how these taste tomorrow when they aren't straight from the oven!

Chicken Enchiladas II

I used this recipe as a base. I live in a country where I cannot find many canned items, so I had to make them from scratch. I made a cream of chicken substitute and used that instead of the Campbell's soup can. I also made an enchilada sauce from scratch and included that inside and on top of the tortillas. On top I put some cilantro, olives, and tomatoes. This recipe is a nice base, but I fear it would have been bland if I had not included the enchilada sauce.

Red Enchilada Sauce

The amount of chili pepper was way too hot.. even for me who enjoys hot and spicy cuisine. Next time I think I will only use 3/4 teaspoon. I also substituted basil and parsley for fresh cilantro. It's a nice base recipe.

Grandmother's Buttermilk Cornbread

I made this last week to accompany some chili. Like some others suggested I halved the sugar. They had a nice flavor but were a bit more cake-like than I care for in cornbread. The boyfriend really did not like them at all. I will try a different recipe next time.

African Chicken Stew

Made this for dinner tonight. The boyfriend and I thought it was edible but not the best. It won't be on my dinner rotation as peanut butter is quite expensive where I live and the recipe did not knock our socks off. The changes I made: 4 small chicken breasts, chicken stock instead of water, cayenne pepper instead of the listed pepper seasonings, added fresh tomato and cilantro and a 5 spice seasoning to beef up the flavor. Served with jasmine rice and fresh basil. If I ever made this again, I would add a lot more seasoning and eliminate the potato as this really did nothing for the recipe. It made it kind of taste like mushy flour.. but I didn't add any flour. The texture was great - not too thick and not too wet.

Cha Cha's White Chicken Chili

It was a nice change to our weekly line-up, but I will continue to try to improve a white chicken chili. The boyfriend and I decided we both prefer the traditional tomato based chili, but this is not a bad recipe to try. I made the following alterations: one fresh jalapeno instead of canned, less cayenne pepper. To make the chili a bit creamier I added a half cup of milk after I removed the chili from the heat. I served topped with sour cream, freshly chopped tomatoes, and fresh cilantro.

Red Currant Pie

The boyfriend and I really liked the pie crust. We would give that 4.5 stars.. the topping.. only 1 star (if that). There are a bunch of red currants that grow down the road and we wanted to try a recipe using them. I searched for a recipe online to use them and found this one. The boyfriend considered the pie inedible without a whipped topping as the pie was simply too tart. We topped it with a vanilla whip topping (from Sweden) and the pie was terrific! It just needed a little more sweetening for our taste.

Grilled Cilantro Salmon

This recipe was awful. I made it for my BF who hates salmon and for me who loves salmon. He still hates salmon and I really didn't care for the honey marinade. It never really glazed and was a bit watery (perhaps too much lime juice?). Either way I didn't care for the flavors with the salmon. Will be removing this one from my recipe box.

Cheesy Polenta

I followed the recipe but made some changes as was suggested by some other reviewers. I swapped water for chicken stock and cheddar cheese for parm. This was my first taste of polenta and my boyfriend and I did not like it at all. I tried to like; I really wanted to like it, but I don't think the texture of polenta agreed with me.
