Broccoli Barley Saute

Made it as directed except that I didn't use quick cooking barley and added a bit of ground ginger to the sauce. Yum!! Simple and delicious. Picky kids did not like it, but they don't like anything mixed together.

Apple Kielbasa Coins

This has become a go-to recipe for my family. A whole bunch of really picky eaters love it. I saute an onion and an apple or two, both peeled and sliced thin. Then I add the kielbasa and let it brown up before I add the remaining ingredients in the recipe. Awesome!

Pumpkin Zucchini Bread

I made these as muffins rather than bread - just greased a muffin tin and baked them a bit less time. They are amazing! They make a great on-the-go breakfast, and I've received tons of compliments.

Filet Mignon with Rich Balsamic Glaze

Absolutely delicious! I did follow the advice of a few other reviewers, however. I browned the steaks in a little olive oil, then put them under the broiler. I made the glaze in the pan that where I had browned the steaks, and let it simmer quite a while to thicken. I also added about a half a tablespoon of brown sugar. Everyone loved it!

Italian Wedding Soup I

Not quite as good as some that I've had, but good nonetheless and very easy to make. I did modify the recipe a bit, following a combination of suggestions from other reviewers. I baked the meatballs at 350 for about 15 minutes and cooked the orzo separately. I then sauted some garlic, onion and the carrots in olive oil before adding the stock and all the other ingredients. Got lots of compliments!

Turkey and Quinoa Meatloaf

Great, interesting flavor and really healthy. I feel like it was just a tad dry, though. But I overcooked the quinoa, so that could be my fault. The recipe says to simmer the quinoa for 15 minutes, but mine was almost burnt at 10.
