5 Busy Weeknight Vegetarian Meals

I'd love to include vegetarian meals in our week. Could you please add some more that don't rely on cheese as one of the main ingredients since my family has some lactose intolerant members?

black bean and veggie enchiladas

You can use any kind of cheese for this. We use lactose free since our family has members with lactose issues. You can also change up the veggies you add to the beans. It's a great way to use up odds and ends in your fridge. I've also added the tail end of salsa jars as I'm cleaning out the fridge.

Succulent Grilled Peaches with Honey Chevre

This was wonderful! Don't let the simplicity of the recipe fool you. It is elegant and unique. I made it as an alternative dessert for people with food allergies. Everyone wanted this instead of the more traditional choice of cake. I wish I'd made more.

Nancy's Peach Tea

What a great way to use some of the many peaches from our tree! We played a bit with the amount of sugar and number of peaches to suit our taste, but the basics for the recipe stayed the same. The key is to really blend the water and peaches before you mix in the tea. If you do it long enough, you won't have any pulpy taste to it at all.

Its a grat quick dinner that everybody in my family loves. I usally double every thing exept the chicken. It usally covers the chicken better but, it still is great. !! :)

Parsnip and Carrot Puree

We got some carrots and parsnips from our CSA so was looking for a recipe that used both. This fit the bill perfectly. I added just a touch of cinnamon for some extra flavor. Although my kids weren't thrilled with it, my husband and I both enjoyed it. I will make this again should I find I have an abundance of these veggies once more.

Slow Cooker Chicken Taco Soup

This is one of the best soups I have ever made! My family adores it. We make it with chicken broth instead of beer (it suits our tastes better). It is a great meal to take to a potluck or for friends who are under the weather.
