Louisiana Sweet Potato Pancakes

These are fantastic, another way to enjoy sweet potatoes without the gushiness and butter. I topped them with a simple drizzle of confectioner sugar+milk and they were to die for. I wish my wife liked sweet potato, as I'd make these monthly! A fantastic recipe and a keeper for sure!

Cranberry Muffins

These are out of this world and everyone who has tried them yet has raved about them and asked for more. I look forward to making these a yearly tradition around the holidays in my family! I haven't found anyone who didn't like them yet, unless they just can't bring themselves to eat cranberry.

Banana Banana Bread

This one is stronger on the banana than most recipes, but that's why I liked it. I used it as a base for a traditional banana bread with walnuts. But I didn't feel the banana was overwhelming like I feared. It actually seems to be what I expect for normal banana bread. Maybe my mom made hers stronger when I was growing up. I don't know but I finally can say I like this best of all the attempts I've made at banana bread.

Strawberry Spinach Salad I

This one deserves 10 stars in my book. Everyone I know who cooks has tried different strawberry salad recipes, and nobody's found one that is this well balanced in flavor. The homemade vinaigrette is easy to make and really soaks the flavor of the strawberry fast. The almonds of course are a perfect compliment, but I find myself adding a few. Anyway, I have yet to have tasted a strawberry salad this good!

Jalapeno-Garlic-Onion Cheeseburgers

Nice blend of burger mix-ins, not a very strong flavor though. I didn't have pepperjack, so I added another jalapeno and "stuffed" the patties with cream cheese. I also used a little worcestire, though I don't know it really did anything. Either way, a good quick and simple recipe to use as a kick-start for many ideas. You could top with cheddar instead, or season with cumin/red pepper, etc. I topped mine with some Defcon hot sauce.

Greek-Style Rib Eye Steaks

These were great even without olives. The feta is just enough to be flavorful but not overwhelming. The seasonings compliment the tartness of the feta perfectly. Perfect with spinach or vegetable medley on the side.

Cheese Ball I

Definitely a very simple way to make a good tasting cheese ball. Nothing to brag about to the world, but comes in handy if you need something simple to take to parties. The pecans give it that "classic" look and crunch and the 2 simple cheeses are better together than expected. I will say the quantities for this are huge. I realize the quantities are easy to measure, but you will make multiple cheese balls out of these quantities. So be prepared before you make it - you'll either need to be at a huge party, or be desiring to keep some at home for a few weeks. Go from about 1/3 of the recipe if you want just a normal size cheese ball.

Daria's Slow Cooker Beef Stroganoff

The wife hated the thought of beef stroganoff, but trusted me enough to try this. Let me say that she now wants beef stroganoff regularly! We get half a cow every year and always are trying to find new ways to use our meat. This is one of the best recipes we've found yet for our round steaks. And because it's a slow cooker recipe, we don't have to fuss to be able to enjoy this during the busy week. Plain and simple, this recipe was out of this world and full of flavor.

Beef Bacon Rolls

Beef and bacon is almost a no-brainer that it's good together, but I'm not sure I really expected it to be this good. The bacon is nice and soft, and keeps the meat tender as can be (esp. if you use Sirloin as recommended). I have to say, if you're doing these in a pan you probably don't need much butter at all except to keep the pan from searing and smoking. The bacon grease will do most of your work. However, I actually preferred doing these on the grill - no butter, just great grill flavor! Sprinkle some salt/pepper on them for even more kick.

Lance's French Onion Soup

The best French onion soup - ever! This is so easy, so quick and so tasty. Wife is a french onion soup lover and does not crave restaurant FO soup anymore! I only recommend half as much bread if you actually want to drink any soup.

Honey-Dijon Salmon and Asparagus

My wife and I didn't have asparagus handy, but we made this recipe and were both amazed. This instantly became our favorite salmon recipe - it's mouth watering and makes you want more. I didn't touch the recipe at all - it was a very even balance of honey and mustard. Thanks for giving salmon some new life!
