After-Thanksgiving Turkey Soup

This was very, very good. I made this according to the recipe. However, I used brown rice and whole wheat floor...my family doesn't know the difference. Maybe I am just a slow cook, but this took me significantly longer than the time listed, a little over 3 hours.

Easy Turkey Tetrazzini

I thought this dish was excellent! After reading suggestions by others I made the following adjustments: I sauteed half an onion and 8 oz. of fresh mushrooms along with 1 clove of garlic in 4 T. of butter. I also mixed in 1 C. of cheddar cheese into the soup mixture (which I doubled, both the soup and the sour cream) before spooning it over the noodles (I used 12 oz). Then topped the whole thing with a sprikling of cheddar cheese, parmesan cheese and bread crumbs. It really turned out yummy. Reminiscent of a favorite dish of mine at a local restaurant. Now I won't have to go out!

Baked Chicken with Peaches

I liked this dish but I was disappointed because the rest of my family did not. My husband said it was "acceptable" and 2 of the three kids could barely eat it. One flat out refused. They are not usually picky eaters so this really surprised me. I made it with canned peaches and added 1/8 tsp of cinnamon. I served it over rice. I guess I will be eating leftovers for lunch this week!

Artichoke and Tomato Chicken

I loved this recipe! I used dry seasonings (adjusting the amounts) because I didn't have fresh and added garlic as others suggested. I omited the pasta sauce because it just wasn't necessary and used canned diced tomatoes. I also used marinated artichoke hearts for extra flavor and chopped them very tiny so the kids wouldn't know what they were eating! I made sure to use fresh mozarella since that is one thing I really enjoy. Sometimes it's the little things that make a dish special. I spooned all the leftover filling on top of the stuffed chicken breasts as there was quite a bit left over. This was a very flavorful dish. I served it on a bed of angelhair pasta and my husband commented that it looked like a pricey dish at a restaurant.

Blue Cheese Beef Tenderloin

This was amazing! Everyone in the family raved, even my 9 year old son and 11 year old daughter. Now that this recipe is a keeper, I will have to keep my eyes open for sales on beef tenderloin!
