Best Bread Machine Bread

The bread itself was good, but mine deflated. At one point when I checked, it looked great, so I think it must have hit the top of the bread machine and fell flat. I may try reducing the water or just put the ingredients in the order I usually do.

Chewy Peanut Butter Chocolate Chip Cookies

The only reason I'm giving this 4 stars instead of 5 is because I changed the amount of one of the ingredients. I added 1 cup of peanut butter instead of 1/2 cup. I've made them by dropping 1/4 cup on cookie sheets and they took 12 minutes. I've also made them by dropping 1 Tbs. and they took 10 minutes They were delicious either way. I've also added peanut butter chips before to punch up the peanut butter flavor. As far as one of the comments about people not knowing how to review, I think everyone's idea of the star system is different. I would say 1 or 2 star is horrible while 3 three stars would be okay and so on. I also thought these cookies had great flavor and I'm not sure why one reviewer thought they were bitter. My husband is a peanut butter freak and he loved these.

Angela's Awesome Enchiladas

I made this for a family gathering. I always get nervous when I'm making most of the food because there are a few people on my husband's side who are great cooks. This was delicious. I wasn't sure about the cream of chicken, but it worked. The only thing I changed was that I used corn tortillas to make it more authentic. I sprayed the corn tortillas and grilled them for several seconds on each side. It really doesn't take that long and it's worth it.

Sweet Corn Cake

I made this for a family gathering. I always get nervous when I'm making most of the food because there are a few people on my husband's side who are great cooks. This was amazing. I had never made corn cake before so I wasn't sure what it was supposed to look like once done. I ended up leaving it in for 60 minutes and it came out perfect.

Annie's Fruit Salsa and Cinnamon Chips

This was amazing. Even my somewhat anti-fruit brother loved it. I didn't add the brown or white sugar. I don't think it needs it. I used strawberry preserves. I tripled the cinnamon chips and set up an assembly line to make it go faster. I pre-cut all the tortillas, sprayed both sides, tossed them in a bag of sugar/cinnamon and it really didn't take that long. This was a side dish that became one of the stars of the meal.

Grandmother's Buttermilk Cornbread

Apple Bavarian Torte

I simmered the apples with the sugar/cinnamon until they were soft. I recommend taking this extra step otherwise, your apples may end up being too crunchy. I also doubled the cheesecake layer. I left out the almonds due to allergies. I followed the rest of the recipe as written and it turned out wonderful. Everyone loved it.

A great chocolate chip cookie. There's nothing really more to say. It's your classic, perfect chocolate chip cookie. I cooked mine for exactly 11 minutes.

Pear Bread I

I recently discovered that my picky toddler loves different kinds of bread so I've been creative in finding ways to put fruit or vegetables in my bread and muffin recipes. I actually really liked this recipe. I used three cups of pears. The taste of pears is very subtle but the bread is very moist.

Blueberry Cream Muffins

These are the best blueberry muffins I have made so far. They are very moist. If I had more blueberries I would have added the 3 cups as some other reviewers suggested, but I only had two. They were still so so good. I made a streusel topping and sprinkled on right before baking. Don't be afraid to fill it up right to the top. They bake into these beautiful, huge bakery size muffins. I also used an ice cream scoop which made it easier to scoop the batter.

Brooke's Best Bombshell Brownies

I make brownies all the time and I am always trying new recipes. This is one of my favorites. My family loved them. The first time I made them I used 1 1/2 cups white sugar & 1 1/2 cups brown sugar. They had a very rich and stronger sweetness if that makes sense. The second time I used all white sugar and my family preferred it over the first. I baked mine for 35 minutes, any longer and it would burn. Remember that there are chocolate chips in the batter so a toothpick may not come out clean. I used the recommended 9x13 pan and thought the thickness was perfect. These brownies are very rich so a really thick brownie would be too much.

Cranberry Orange Cookies

A great cookie to enjoy with a cup of coffee or tea. My cookies turned out a little flat but that's my fault. I think I added to much orange zest. No one complained though. You have to use fresh cranberries. I pulsed mine in the food processor. I also used orange concentrate for the glaze and added powdered sugar until it reached the consistency I wanted. The flavors in this cookie are amazing. Tart and sweet, delicious!

Fudge Truffle Cheesecake

WOW! There are no words to describe how delicious this is. I made it for Thanksgiving on my husbands side of the family. My mother-in-law does not usually like cheesecake but she wanted to try it because it was chocolate. She loved it and asked me for the recipe. That is huge. Everyone else loved it too. It's very creamy and although it's rich, it's also light. I don't know how to describe it. It was just an amazing cheesecake. I decorated it with white chocolate and semi-sweet chocolate. I would definitely recommend using a really good semisweet chocolate in the recipe. You have to try this recipe.

Yummy Sweet Potato Casserole

I made this for Thanksgiving and an early Christmas celebration. Everyone on both sides of the family loved it. I doubled the recipe. I used 5 sweet potatoes and roasted them in the oven. I definitely think that brings out their full flavor. I used evaporated milk like another reviewer suggested. This was super easy to make and so delicious.

Pineapple Crisp

I had some fresh pineapple I needed to use up and of course what better way than to add sugar, butter and other naughty things to fatten it up. I've never used pineapple in a crisp before and this was delicious. The filling complements the pineapple perfectly and the crumb topping is not too heavy. There was enough juice from the fresh pineapple to make the filling work but you could probably use pineapple juice if you want to use fresh. I substituted some of the brown sugar with white sugar to make it a bit lighter and I didn't have enough coconut so I added some oats. I doubled the recipe and put it a 9 x 13 glass baking dish. It baked for 30 minutes and was just beautiful. If you want to try a different take on crisp, try this recipe out. You won't be disappointed.

Chewy Coconut Cookies

These are super easy and delicious. The coconut flavor is there but more subtle than you may think with the amount it calls for. I think the main job of the coconut is to add that wonderful, chewy texture. One batch for me made about 50 cookies, but I made them small. I rolled them in teaspoon size balls and didn't flatten them as they flatten while cooking. When they were cooled I dipped half of the cookie in melted white chocolate, Yumm! I think it might also be good dipped in dark melted chocolate.
