Nice, easy recipe. Good in place of any boxed yellow mix. We made it both with separating eggs and not separating, and it came out fine both times. We did add 1 teaspoon salt to recipe. And, by the way, 36 servings means it makes 36 cupcakes.

Nanna's Banana Bread

Great recipe! Excellent tea or coffee bread. Not too sweet, but very flavorful with a moist, even crumb. Recipe went together very easily. I liked blending all liquids plus sugar and bananas. I used whole milk with 2 teaspoons lemon juice in place of buttermilk, and 1 heaping Tablespoon poppy seeds in place of nuts or chocolate chips. I also used King Arthur White Whole Wheat flour. I baked it in my countertop convection toaster oven for 60 minutes, and covered the top with foil the last 30 minutes of baking to avoid over-browning. It came out perfect and delicious.
