Zucchini and Potato Bake
I really wanted to like this - but I just couldn't. The bread crumbs were soggy (which is pretty gross) and that ruined the taste of the zucchini and potatoes. However, I cut potatoes small and zucchini chunkier and did not have a problem with the cooking time. I am going to try making this again without the bread crumbs and see how it turns out. That should make cleaning the cooking dish a lot easier, too... I had to soak it for two days before I could clean it properly!

Sausage and Bow-Tie Pasta Florentine
DELICIOUS! Both my husband and I loved it. I made a few small changes though: 1. Fresh spinach instead of frozen 2. Added mushrooms 3. I used campanelle pasta instead of bowtie because that was all I had stocked in the pantry; campanelle tasted great, but I think the bowtie would be even better.

Caribbean-Spiced Roast Chicken
This was the first chicken I'd ever roasted. It was beautifully moist -- the meat practically fell off the bones -- but it was certainly a very untraditional taste. I rather liked it, but my husband hated the rub. I guess it is a dish people either love or hate.
