Summer Squash Bread

Due to friends giving us an abundance of squash, I searched for recipes to use it up quickly and found this one. I halved the recipe and baked it in a normal size loaf pan. To healthy it up a little more, I used coconut oil, evaporated cane juice and whole wheat pastry flour. I made it today and tried a piece and I'm pretty sure I heard angels singing when I tasted it! A really wonderful quick bread and great way to use summer squash. I think the cinnamon and nutmeg are really what sends it over the top! I may make more and freeze to give as gifts during the holidays. Definitely a keeper recipe!!

Oven Scrambled Eggs

Really great easy recipe! Eggs were fluffy & delicious and I love the fact that I don't have to stand over the stove & babysit the eggs while they're cooking! Definitely a keeper!!

Mock Tuna Salad

WOW!! I had an overabundance fo chickpeas in my pantry because I love to make homemade hummus. I came across this & decided to try it and WOW! It is awesome! I increased mayo, mustard & such and used dill relish because I prefer it. This is really delicious and goes together so quickly and easily! ANd without the tuna "fishy" smell that I loathe. Love, love, love this!!

Arkansas Green Beans

I have a very similar recipe that omits the butter. It does not diminish the taste at all. Also, if you marinate the beans in the sauce a few hours or overnight, the flavor is greatly enhanced.

Giant Ding Dong Cake

I've made this recipe several times for family, friends, and church cake auctions. It really is amazing how it tastes like a real ding dong cupcake. The filling is awesome. A tried and true favorite!
