To Die For Blueberry Muffins

Quick and easy. They look beautiful and held up really well. Even better then 2nd day! Nothing to add to what the others have said to add or subtract from the recipe other than I had extra blueberries so I tossed them in. Worked great!

Easy Lemon Cookies

Easy and super quick. I used an orange cake mix, but with the lemon extract and a bit of lemon peel. I'm calling them citrus crinkles.

Easy Slow Cooker Ham

PHENOMENAL! I made this tonight and we all said it was like Christmas dinner. I did find that Kentucky brand ham at Target. It was REALLY good. I was skeptical about the vanilla, but it was spot on. It is worth forking over the coin for the real maple syrup too. I didn't have an orange, so I used the zest of two clementines then cut the clementines in half and tossed them in. Cooked on high for 2 hours and low for 4. It was the BEST ham ever. This is the only way we'll eat it from now on. THANKS!!!!

Chicken Noodle Casserole I

Wow--easy peasy for this Sunday afternoon! I had cream of celery and mushroom, and that worked fine. I think it is basically 2 cans of cream of anything will work. I would have put in mushrooms, but the kids don't like them. Next time, I'll add peas, but it was fine just like it is! I did use Amish egg noodles which have a heavier, thicker, heartier consistency. I also added some chicken bouillon granules. Excellent "starting point" recipe. The options are endless!

Golden State Mushroom Soup

Fabulous and quick. I like more brothy soups, so I was ok with the thickness. I also used an entire BOX of chicken stock and reduced the milk to make it a bit more figure-friendly. Used light sour cream, but not fat free, which I think always messes up the texture when cooking. Excellent!

Peanut Butter Cup Cookies

Family REALLY loved this! Excellent! I made it with all brown sugar, but other than that, exactly to recipe. I bought a big bag of pb cups. According to the pkg, there should've been enough for the 40 cookies for this recipe, but they short-changed me a dozen! So I froze the dough minus the cups. Will try to bake them off later....

So incredibly easy!!! Just made a batch to hold the boys over until the weekend, but I figure it will last about 2 days--if I'm lucky! Made according to recipe except for a smidge of butter. Maybe 1 T.

Chewy Coconut Cookies

My husband REALLY liked these. The butter was a bit warm, so the cookies spread out to a thin cookie. Didn't matter one bit. They were DELISH. I did double the coconut. Maybe that messed it up? Would definitely make these again.

Jam Filled Butter Cookies

Very good! I increased the sugar and used a whole egg as suggested. I should've left them in the fridge a bit longer as they spread (Happens to me all of the time. I overwork dough and have my butter too warm.) The cookies were delish, though. I will make them again, probably adding a bit of almond extract next time.

Peanut Butter Apple Dip

Yummy! Added a little more milk to make it thinner. Also added (as suggested) vanilla. I think I'll make this as an icing and put it on boxed brownies with some chopped peanuts on top! New dessert! :)
