Chocolate Chip Banana Bread II

I halved the recipe and substituted butter for the shortening. Otherwise, I followed the recipe exactly. This banana bread has GREAT flavor! My husband loves it. At 50 minutes, a toothpick inserted into the bread came out clean. However, next time I make this, I will keep the bread in the oven much longer.... at least 60 minutes! The bread kind of caved in after sitting for 20 minutes in the pan... and we had difficulty getting the bread out of the pan without the bread crumbling. It was a bit of a mess... but a tasty mess, and we will definitely make again with slight modifications.

Bow Ties with Sausage, Tomatoes and Cream

I followed the recipe exactly, without any modifications. My husband loved this dish! I thought it was very good, but am not sure it's worth the fat intake. I'll probably try making again using half and half or milk, to lower the fat content.

Mom's Zucchini Bread

I made this zucchini bread today, and am surprised by all of the 5 star reviews. The bread is far too sweet in my opinion, and there's not nearly enough zucchini. It does taste good overall, but it's definitely not what I picture for zucchini bread. I'll try a different recipe next time.

Manicotti Alla Romana

This manicotti recipe is fantastic! I made it for the first time today for company - and everyone loved it. I followed others' suggestions to use mild Italian sausage instead of beef, and I used just one chicken bouillon cube. I didn't have any half and half on hand, so I used 2% milk instead. The white sauce turned out perfect, so I will definitely use milk in the future to cut out unnecessary calories. There is no need to cook the shells - I filled uncooked manicotti shells and then cooked the dish for 40 minutes at 375 F. We'll definitely be making this again!
