Cream Cheese Frosting II

Reviewed: Feb. 17, 2015
Cream cheese frosting perfection! Silky, smooth with just a bit of tang and definitely not at all like the sweet junk from a can - this is how cream cheese frosting should taste!

Pizza Dough II

Reviewed: Nov. 15, 2014
Excellent! Only change made was to pre-bake crust in preheated 500 degree oven until lightly browned. Added toppings and put back in oven just until hot and cheese melted. Everyone raved - thanks for sharing Stephen Carroll!

Chicken Pot Pie Casserole

Reviewed: Nov. 5, 2014
Good basic recipe, but after reading reviews decided to season it up on first making. In glass measure cup mixed 1 egg, 1/4 c onion & chive cream cheese and enough milk to bring liquid to 2/3 c. Added liquid to 4 c hash brown, 2 T chives, 4 green onion sliced thin, 1t minced garlic and used 7x11 glass baking dish. Added dash of onion powder & garlic powder to veggies - used equal amounts fresh sliced carrots, celery and frozen green beans, peas, corn & broccoli (total of 16 oz) and lastly about 1/4 c finely chopped frozen spinach. Didn't use bread crumb topping, put extra diced chicken (seasoned well when cooked) on top. Next time will probably added a bit of evaporated milk to the condensed soup just to make it a bit creamier. Family loved it!

Pasta e Fagioli I

Reviewed: Apr. 26, 2014
So good, so easy and even better the next day - definitely add pasta as it's being eaten otherwise it gets mushy and soaks up all the juice. I did end up adding extra garlic, an extra can of tomatoes (Italian seasoned diced) along with an 8 oz can of Italian style tomato sauce; seasoned with additional freshly ground black pepper just before serving.

Baked Fried Eggplant

Reviewed: Jan. 29, 2014
Read through all the reviews as this was baking so was a bit concerned it would be bland. Just took it out of the oven and it's excellent! Used 1/2 seasoned bread crumbs and panko with 1/4 c Parmesan, 1 T Italian seasoning and pepper added. Have found that if floured item "rests" for a few minutes while mixing the the rest of the coatings, there is no issue with clumps falling off. There was A LOT of leftover breadcrumbs. Baked this at 350 on a rack after spraying with olive oil - sprinkled on a bit of garlic powder after turning, sprayed flip side with olive oil and raised the oven rack to help crisping based on other reviews. As always when oven frying, will cool and refrigerate until dinner time & then reheat @400 until warmed through and really golden & crispy. Sour cream adds a nice tasty tang! Thanks for sharing a great, easy to personalize recipe Kris!

Spicy Oven Fried Chicken

Reviewed: Feb. 20, 2013
Doubled crumb mixture. Dipped chicken in beaten egg with a bit of buttermilk/hot sauce mixture added, crumb mixture and then let pieces rest before re-coating. Let coated chicken pieces rest on wire rack in a pan for a few minutes before spraying liberally with olive oil. Baked in 350 degree oven for about 40 minutes, turning halfway through.
