Baked Scallops

Delicious and easy! I followed the recipe except for some minor changes. I used fresh parsley and panko bread crumbs. I infused the chopped garlic in the melted butter. I poured a little bit of the garlic butter directly on the scallops and then mixed the remainder in with the bread crumb mixture. Bay scallops are small so I decreased the cooking time to 15 minutes and they were perfect. I served with wedges of lemon. I will definitely make again!

Banana Crumb Muffins

Delicious! Did not change the recipe at all except to add one extra banana because the ones I had were small. I love the topping but found that it made way more than you need for 10 muffins so I will cut back on the measurements next time. Baked for 18 minutes and they were cooked perfectly!

Slow-Cooker Chicken Tortilla Soup

Delicious and so easy! Made it almost exact but I am snowed in at the moment and did not have any cilantro which would have made it even better! I was also out of garlic so I added 2 tsp of garlic powder. I added a can of black bean and added only chicken broth (no H2O). Per the recommendatios, I added some lime juice to the individual bowls and topped wth shredded monteray jack cheese and crushed corn tortillas. YUM!

Grandma Ople's Apple Pie

I am prematurely rating this on site alone! This is my first time ever attempting to make an apple pie. It looks and smells delicious. I pretty much followed the recipe to the letter with the following additions/changes. I tossed the apples in cinnamon. I added some nutmeg to the filling and I substituted apple juice for the water. Am off to add a picture because it is so gosh darn purty! ETA: Tasted as good as it looked! My husband said it was the best apple pie he ever had!

Sunshine Chicken

Easy and tasty recipe. I made it exactly as listed except I used light corn syrup and added some grated ginger. I basted every 15 minutes for a total of 45 minutes at 350. I took another reviewers suggestion and drained the grease each time I went to baste. I then ran them under the broiler for approximately 5 minutes. For a slightly healthier version, I used boneless/skinless thighs.

Deviled Eggs

I made these for a birthday party celebration. It was the 1st time I have ever made deviled eggs and they were a huge hit! I followed the recipe exactly except that I added the salt to taste. People raved about them and could not quite figure out why they tasted different (a good different) than the deviled eggs they have had in the past. They were surprised when I told them there was white vinegar in them. I will definitely be making these again....a keeper!
