Baked Lemon Chicken

This was GREAT! For measurement's sake, I used 1 stick of butter, and 4 garlic cloves. The juice of one large lemon was also used. To keep the melted butter mixture from going cold, I kept all in a small sauce pot on the stove over low heat. I used "extra" butter mixture over breasts before cooking. Cooked for 40 minutes on 350. Served with steamed rice. FANTASTIC!

French Butter Cakes (Madeleines)

I really like these Madeleines. I had Madeleines for the first time in France over the summer, and fell in love with them! Mine were not quite as pretty as the ones in the picture, but this is my first attempt at making them. Next time, I may drop the mix into the tin with a melon baller or ice cream scooper. I dressed mine with powdered sugar. They taste divine! Cannot wait to share them with my friends and family.

Maple Salmon

I haven't traditionally been a "fish" person. In fact, it's only been in the last 7 years that I've eaten it. This is a good recipe. 20 minutes in the oven was too short for my cut of fish. I liked the idea of incorporating brown sugar into the mix, wrapping in foil for marinade step, and having the fish spend a few minutes in the broiler. It was a great meal. I served with some Jasmine rice that I made in my rice cooker. Could not be an easier meal!

Apricot Chicken

I liked this recipe, but I think a couple of things could have made it a five-star review: honey and a bit more salt. I think that some orange zest might really perk up the flavor, too. I reheated the leftovers we had today, and I added the honey and salt. It made it a lot more flavorful. I think the orange zest would've put it over the top!

Honey Ribs

These ribs were SO easy to make. We enjoyed them with mashed potatoes and sweet corn. My husband and step-son were already asking for seconds, and my daughter thought that we were probably having a dinner that was better than where she was heading to on her date!

Chuck's Favorite Mac and Cheese

I made this the other night for my family. It was FABULOUS! The leftovers sat in the fridge for a day, then enjoyed by my husband and I for lunch. It was GREAT!!! I will definitely make this again. I've already shared the recipe with friends and family.

Easy Slow Cooker French Dip

This was EXTREMELY easy and very tasty. It was even better on day two, after I let the sliced meat soak in the broth and juices overnight. To reheat, I just placed Crockpot dish back into its holder and turned it on low for a couple of hours. My husband ate the rest of the meet on day three like a stew with buttered bread. We will definitely have this again.
