Easy Cajun Jambalaya

I followed the recipe but used a bit of extra spice plus siracha, and used cauliflower for rice. The family was amazed it's going on our rotation!

Moroccan Tagine

I love this dish because you can do so many different things with it. I like to substitute a yam, and 3 heaping TB of curry powder, 1 TB each of chili powder and cumin, and cayenne pepper to taste. You can stir in a half cup of yogurt, sour cream, or coconut milk to sweeten and thicken it. This makes you look like an amazing cook, with little effort!

Easy Chicken Marsala

I've never tried regular Chicken Marsala but I've loved all the Indian food recipes I've tried so far except this. Perfect recipe in every way- I do not prefer the taste of the wine at all. I'll think of something else to replace it with.

Indian Chicken Curry II

This is really great, you can adjust it a lot to taste. I double the other spices and use more curry, cut out the coconut and add potatos and carrots, diced tomatos. 'Bits' If you have been cooking Indian for 14 years and you wouldn't eat more than 'one bite' perhaps tell us what you would do differently!!

Sweet and Sour Meatballs

This is amazing, it's an easier version (and spicier) of my polynesian meatballs. I did half and half ground beef with pork sausage, I think I'll always do it this way. I put a 12 oz bottle of chili sauce and a huge dose of Siracha sauce in it. I was concerned the meatballs would fall apart but they eventually firmed up in the crockpot. This time I think I'll add a half-cup of italian bread crumbs. I will also add a can of chunked pineapple at the end this time, and serve it over white rice. Incredible! You can adjust the jelly or chili sauce to taste obviously for those that said they didn't like the flavor. (NEVER use frozen meatballs they can't even begin to compare!!)

Chicken Enchiladas II

This is 5 star or better combining some of the suggestions others made. I used all the original ingredients but added a few dashes of cayenne, salt and pepper, cumin and garlic powder. Used yellow onion instead, 1/2 cup of salsa, and added the cream of mushroom and sour cream all to the skillet. Meanwhile I made a quick chicken-flavored rice and added that. I layered soft large torillas 2 at a time and poured the ingredients in-between. I ended up with four layers including top and bottom. Sprinkled extra cheese and chicken mixture on top and baked for 20 minutes at 350. It was incredible!

Italian Chicken and Chickpeas

This was easy and amazing. I am completely new to Italian food; never having liked the Olive Garden except for the soup and salad. After reading other reviews I did cut up my chicken, and rather than reduce the cayenne pepper and red pepper flakes, I simply added another can of tomato sauce. This did not dilute the flavor in my opinion, it all still tasted great and my kids didn't complain too much about the spice. Thanks for a great 'real Italian' recipe I will definitely make this again! Oh and I added half a package of frozen spinach; it was great!

Chicken Pot Pie IX

Amazing, although my experience with the pie shells was dreadful, next time I will not get ones that are not meant to be taken out of their containers. I had to place strips of a pie shell across the top like an apple pie! Anyway now I know better, it was delicious.
