Carrot and Ginger Soup

Good soup, but needed a lot more ginger and I would advise that you use milk or water rather than cream. Otherwise it ends up tasting too sweet. I thought the texture was a bit chunky, so next time I would cook the carrots for a bit longer before putting them in the blender.

Baked Yam and Potato Casserole

Lacks a lot of flavor, definitely needs more salt and herbs. I added sage. It was also much too wet. I had to drain the extra liquid out.

Chocolate Chip Banana Muffins

Vegetarian Korma

Excellent! I did make some changes, simply to make the recipe more to my personal taste. For instance, I replaced the peas with chickpeas and added some diced tomatoes. This is one of the best recipes I have ever tried. However, it is very rich!

Garbanzo Tomato Pasta Soup

This is a good soup. I give it 3 stars because the flvours are good, but very simple and basic. This is a satisfying soup, but nothing fancy. It is a very quick and cheap way to make soup, especially for a last minute meal. I used only a 15 ounce can of tomatoes, and added a bit of soy sauce to enrichen the flavour.

Pumpkin Chocolate Chip Muffins

Good muffins, but nothing earthshaking. I used more pumpkin than the recipe called for for added flavour and moisture. Recipe is also good without the chocolate chips, but with a cream cheese icing on the top instead.

Vegetable Stuffed Cannelloni

Delicious recipe! Very tasty and rich. Does take a long time to make but is worth it as long as you make more of the recipe at the same time. I used manicotti instead of cannelloni, which gave me 12 stuffed manicotti. I would make more of the sauce, simply because it is so good.

Rhubarb and Strawberry Pie

Tastes very good, but did turn out very watery. That is why I am giving it 3 stars rather than 4. Because of this extra liquid, the bottom of the pie crust did not cook very well. Next time, I would bake the pie crust for a few minutes seperately. Otherwise, a very sweet and tasty pie.

Vegetarian Four Cheese Lasagna

Very tasty lasagna, and also a nice change from the usual baked pasta dishes. I used butternut squash instead of pumpkin, and next time I would use more of it because it really added nice flavour. It takes a long time to make, much longer than indicated. But at least it is very easy to make. It is an expensive recipe, but it provided my husband and me with 3 meals each, which in the end made it a pretty good deal.

The Best Vegetarian Chili in the World

I am not a huge chili fan, but this was very good. I do think it needs a bit more seasoning than the recipe calls for. It makes a ton of chili! I used pinto beans instead of garbanzo beans.

Carrot Cake III

Very good and easy to make. It stayed moist for days! I made it without pecans and with extra carrots, which worked out great. However, it needed to cook much longer than indicated in the recipe.
