Best Spanish Rice

First let me say that I misread the recipe and added two cans of chicken broth instead of two cups. But even with that mistake, this dish was wonderful. All of the broth was absorbed by the rice and the texture of the dish was excellent. My kids, who will not even take a bite of a Spanish rice out of a box...gobbled this up. I will definitely make again and with 2 cans of chicken broth.

Catherine's Spicy Chicken Soup

We LOVE this soup! This has become a staple in our house and even though the ingredient list is long, most (if not all) items are things I keep on hand. I follow the recipe except for a couple of minor changes.....I use frozen corn instead of canned, and we dollop the sour cream into our bowls instead of mixing it into the entire batch of soup. My family likes to add shredded cheddar cheese and crushed tortilla chips or fritos into their bowls at the table. But the soup is delicious without it too. Also, this recipe makes a ton of soup....find it hard to believe it is only 8 servings. When I serve it to my family of 6, we have more leftover than we ate. Of course, that is a good problem to have.

Moroccan Chicken Stew

The whole family loved it. As suggested, I doubled the garlic and all of the spices plus addes 1/2 tsp. tumeric and a tiny bit of saffron. I added about 1/2 cup of water as well to be sure the sauce wasn't too thick. Will definitely make again with these same modifications.
