I can never aquire enough recipes! Even when I get rave reviews about a recipe, I still look for an even better version. I love to listen to my daughter play the piano, watch my son play hockey and I enjoy displaying my yougest daughter's art. I love playing volleyball and taking my dog to the dog park.

Authentic Pad Thai
Everyone loved it! My oldest said it was the best Pad Thai she ever had. I didn't have the tamarind paste but had bought the tamarind pods at a mexican food store a while back. So I just removed them from casing and cooked them in the vinegar sugar solution. We like a little stronger peanut taste so I always add a scoop of peanutbutter just before removing from the heat.

Cheesy Potato and Corn Chowder
My family loved the chowder. I added a few slices of pepperjack cheese too, for the extra heat and a few more potatoes. I used two smoked chops that I cubed up and added at the end for some meat.

Burrito Pie
This recipe is very kid friendly, kids can help assemble their own individual pie with the toppings they like. I used whole wheat tortillas and only used three for each pie. I made two small pies, and three larger ones using this recipe. One small pie was for a vegetarian, so just used sauce and a variety of beans (whole and veg refried) , tomatoes, onions and cheese. Made one kicking up the heat for my son and minus cheese and my husbands without beans ( allergic to them) and my daughters minus tomatoes and extra beans. Everyone enjoyed their pies! Much quicker to make than enchilladas and just as yummy! Thanks for sharing this recipe.
