Slow Cooker Turkey Breast

Reviewed: Sep. 18, 2008
I gave this a 4* because I did not like the onion soup flavor. I did not make any changes to the recipe. The gravy was a bit to strong with the soup. I will try again with my usual turkey seasoning. But, I am convienced that the crock pot is the way to go for a very tender turkey breast.

Summer Squash Puffs

Reviewed: Jul. 24, 2008
Just had these for dinner and was a big hit. Very easy to make. I did not change anything with this recipe. It makes a lot, so I may cut in half next time. Depends on how the leftovers reheat.

Double Layer Chocolate Peanut Butter Pie

Reviewed: Mar. 23, 2006
This is definately the best peanutbutter pie I have ever had. Have made it 3 times now, and everytime it is perfect. The last time I made it I had to use chocolate flavored whipped cream (it was the only one that I had in my freezer) but, it worked great and I think that is the way I will make them now. I took one to a community dinner and heard people raving about it.

Artichoke and Sun-Dried Tomato Chicken

Reviewed: Feb. 15, 2006
Great taste, and so easy to make. My only change was to cube the chicken before browning. My husband loved it, and that makes me happy. I served it over rice, but would also be very good on pasta. Garlic bread and salad on the side. What could be easier?

Excellent!!! Did not change a thing. It does not need a change; great the way it is. My husband and I are doing low carb and I am always looking for recipes that fit our diet. This is a great addition to our meal plan. Try it, you want be disapointed.

Awesome Eggplant Rollatine

Reviewed: Aug. 4, 2004
This recipe is truly awesome. We just had this for dinner and there were no leftovers. I do not think that the batter was too thick, actually I thought it was so good I will probably use it as a batter for other foods(fried green tomatoes come to mind). I did use soy flour just to reduce the carbs and it worked just fine. We have eggplants in our garden so this will for sure be on our menu again.

Sicilian Ricotta Cheesecake

Reviewed: Mar. 25, 2004
Very easy to make and taste great. My husband is diabetic so I used Splenda. Also omitted the orange zest as other reviewers had suggested. It is definately a desert to make again.

Rempel Family Meatloaf

Reviewed: Aug. 14, 2003
This meatloaf is fantastic. I did not change a thing in the recipe. My husband said that it was the best meatloaf he has ever had. It was so good that there was none leftover. The only thing I will do different next time is to increase the recipe (I missed my meatloaf sandwich for lunch the next day). Thank you Connie for sharing with us.
