High Altitude Perfectly Chocolate Chocolate Bundt Cake

Reviewed: Jun. 20, 2015
hh6ketch-I am sorry the recipe didn't work for you. The higher the elevation the less baking soda and baking powder you will need to use. Since you are at a higher elevation, (6000 feet), you might try less baking soda and less baking powder. Perhaps 3/4 to 1 tsp. of baking soda and 3/4 tsp. to 1 tsp of baking powder might work. You will have to experiment to find the right combination.

Traditional Rub for St. Louis Ribs

Reviewed: Jun. 15, 2015
We loved this rub. I did cut the salt back to two teaspoons, added a tsp. cayenne pepper, and 1/2 tsp. of black pepper to the rub mix since my hubby likes it spicy. If I make these again, I would add more heat. I smoked it in the smoker with hickory and apple wood.

Isaac's Carrot Cake

Reviewed: May 25, 2015
Kali, your cake is phenomenal! My family loved it! It is not your typical heavy carrot cake and it has a fine and light crumb texture. I love the mandarin oranges and orange zest! My husband didn't know there were mandarin oranges in the cake, but what a way to make a moist cake. Thank you so much for sharing your wonderful cake! I didn't have canned mandarin oranges so I used 3 small fruit cups in 100% juice which are 4 oz. each from Dole. I drained the oranges. I also live at high altitude, 5062 feet. So, I had to adjust the baking soda to 1 and 1/4 tsp.

BBQ Chicken Pouches

Reviewed: May 22, 2015
This recipe was a great hit in my family. Everyone including my 14 month old grandson, 7 year old granddaughter loved this dish. I did cook this in the oven in double wrapped foil. Also, I used parchment paper to line the baking tray for easy cleanup. I am glad I did because one of the packets leaked. The chicken was tender and moist. My family likes extra sauce so we had small bowls of bbq sauce for dipping. I used cherry tomatoes which did make the sauce watery. I will make this again and will not use the tomatoes. You will have to watch that the chicken doesn't overcook. I checked the chicken with a meat thermometer after twenty minutes and two of the chicken breasts were ready to eat. Also, I wasn't sure how much corn to put in each packet since I had a large bag of corn. I think next time, I will use a cup of corn for each foil packet. Thanks, Angie for sharing your wonderful recipe!

Brown Eyed Susans

Reviewed: May 17, 2015
My husband loved these simple cookies. Corrine is right, you can use whatever flavor of pudding you like.I had one box of pistachio pudding and one box of vanilla instant pudding. This recipe is very forgiving. I can see it as one of the recipes my granddaughter would love to make. I made these cookies and added 1/4 cup brown sugar taking the advice of one of the reviews. I used a Tablespoon of dough and rolled them in rainbow sprinkles. I placed the cookies on parchment paper and flattened the cookie slightly (2 inch circle) and baked the cookies. Then, I took the cookies out and pressed the Hershey's Kisses into the cookie. (I didn't have any chocolate chips. Thanks, Corrine! UPDATE: Don't use diet pudding, the cookies will dry up to fast. After two days the cookies were dry.

Guacamole

Reviewed: May 5, 2015
Great recipe! We love guacamole in our family. Adding a Roma tomato was a welcome change from the way we usually eat guacamole. I used less salt as suggested by one review and subbed garlic salt. For a little more zip, add jalapenos.

Easy Chicken Flautas

Reviewed: May 3, 2015
My family liked these flautas. The lemon flavor gave the flautas a tang that lemon lovers would like. I sautéed the onions in the butter and then added the flour. I used a whisk to smooth out the roux. I love to use roasted chicken so the chicken is not too dry. I used two chicken breasts sprinkled some poultry seasoning on the chicken breasts with pats of butter. Then I placed the chicken in a oven proof pan with a lid and baked the chicken for 25-30 minutes. Thanks for sharing your recipe Staria.

A recipe for someone wanting chocolate in a hurry. This recipe reminds me of chocolate banana loaf. I added some strawberries, blueberries and whipped cream. Less calories since the recipe does not use oil.

Luscious Lemon Triangles

Lemon bars have always been my favorite dessert. My husband and granddaughter liked the sweeter crust. You will also need to use the aluminum foil, so the lemon bars do not stick to the pan.

Mini Dessert Tacos

Reviewed: Jan. 10, 2015
I loved these mini tacos and so did my husband. He ate four of the fruit filled delights. A beautiful little bite of cinnamon and fruit. I used a flower shaped 3 inch metal cookie cutter since I didn't have a round cookie cutter. This recipe was an easy recipe to make and I would make these again. Perhaps, a cute dessert for a brunch, bridal shower or a tea party for my little granddaughter.
