Pasta, Who Doesn't Love it!

This month, Barilla was the sponsor for the All Recipes Ambassadors. I was happy that Barilla was a sponsor because I always buy Barilla pasta.  I have used Barilla pasta for years as you can tell by my pantry. Besides, my family loves pasta as well as my dogs! (I miss my canines, Jessie and Misha they have both gone to Doggie Heaven and my granddaughter is now 6. My, how time flies.)

In the summer, it seems there are so many things to do besides spend all day cooking. I picked two recipes from Barilla because the meals came together quickly. The first recipe I made took less than 30 minutes to prepare. My husband and daughter were a great help in prepping this meal. Thick Spaghetti with Barilla Marinara Sauce. Since my family loves pasta this recipe was a big hit. Of course, adding some grilled shrimp and portobello mushrooms rounded out the meal. itle="" href="" style="color:rgb(60,60,179); text-decoration:none"><

The second recipe we made was the Wavy Lasagna with fresh ricotta and meat sauce. My daughter prepped this meal. Buying the Barilla meat sauce made for a faster prep time.  I liked the fresh mozzarella added to the top. I added 1/2 lb. of hamburger because my family likes more meat. I also added more sauce because my family loves a lot of sauce. So be prepared to buy two jars of sauce.  After eating the lasagna my family reviews were:  add more mozzarella cheese in between the layers and perhaps some fresh spinach. itle="" style="color:rgb(60,60,179); text-decoration:none"><

I love that picture of the doggie eating his sketti! Funny, when i got the email, I wasn't too enthused about pasta in the summer, but the range of recipes had something perfect for every season.

Hi BigShotsMom, my family was excited to have pasta. Pasta is always on their list of requested meals. I love the photo of the dogs. My granddaughter offered the spaghetti to the dog and of course it wasn't refused.

About Me
I enjoy cooking for our family sit down dinners. Although my kids are grown, we are a close family that enjoys 4-5 sit down dinners a week together. My family's favorite dinner is chicken enchiladas smothered in green chili. I have a passion for cooking, baking for the holidays and food photography.
My favorite things to cook
I am family oriented and spend time with my family enjoying meals. My favorite things to cook are Mexican food and any food my family asks me to cook. My family looks forward to home cooked Mexican food at least once a week and Italian food.
My favorite family cooking traditions
I am on a journey to reclaim family recipes that were lost when the cooks in my family passed away. Cooking traditions are a major part of my passion for cooking. On Christmas Eve, we always had green chili and tamales. Cookie baking, lemon bars, pizzelles , and potica have been a must at Christmas as long as I can remember. My family looks forward to homemade pizza, when we gather as a family to decorate the Christmas cookies. Thanksgiving wouldn't be Thanksgiving without noodles and gravy piled high on mashed potatoes, pumpkin pie, and broccoli and rice casserole. On the 4th of July, there is the 4th of July Potato Salad that I make using 10 pounds of potatoes. Mexican Food is part of our weekly menu--green chili served over mashed potatoes or as a slopper (green chili poured over hamburgers.) I am always making tortillas for someone. They call my tortillas little white pieces of gold. Saturdays are Family night for dinner. It is the one day my kids can request a meal.
My cooking triumphs
Seeking help on the Buzz and the AR Blog has resulted in a few triumphs. I am extremely ecstatic about overcoming the yeast monster. I can now bake baguettes, focaccia and the best rolls in the world, my Grandma Rita's Butter Rolls.
My cooking tragedies
My first attempts at baking bread/rolls resulted in rock hard flat rolls. However, I am improving. Baking at High Altitude is somewhat of a challenge.
