Shrimp and Crab Stuffed Flounder

We bought a live fluke and cut the filets ourselves. Used canned crab meat but fresh tiger shrimp. Weren't able to roll the filets once stuffed so baked flat with extra chicken broth/mushroom soup mix. Served with broccolini and jasmine rice. Absolutely delicious!

Peach Cobbler

This cobbler was delicious and easy to make. I have never made cobbler before so didn't know what to expect. I agree on adding extra peaches but I did not slice them. I was also unaware that the dough some how magically rises to make the top crust. I would suggest baking longer at a lower heat to reduce the "cakeyness" some people have noticed plus, reduce the amount of peach juice you add.

Oatmeal and Applesauce Pancakes

I kinda hodge podged this recipe since I only had half a cup of sweetened applesause. I reduced the sour cream to 1/3 cup and added an additional 1/4 tsp vanilla plus 3 tbsp of milk since the batter was really thick. The pancakes turned out amazing!! Next time I hope to get crazy and try whole wheat flower and have the right amount of apple sauce. My 19 mo son loved them!!

Giblet Gravy II

This gravy turned out fantastic. I made this for my first Thanksgiving and my only complaint is operator error. I had to keep adding more and more flour and more and more dripping because the mix would NOT turn golden brown. Again, operator error. I ended up having to cook for 30 min instead of 15 but it was absolutely delicious!! BTW I did not use giblets and it was still GREAT. This is my go to gravy from now on!!

Banana Muffins II

Delicious!! I added a touch of vanilla and pinch of cinnamon and walnuts to the tops. I guess the only thing I still wonder about is how much is too much mixing when it comes to muffins. Mine turned out very moist but I still wonder if they could have been better.
