Crustless Cranberry Pie

Reviewed: Dec. 1, 2012
Ok folks, can you say "Tarty, nutty and simply delicious?" Than this unique dessert will not disappoint you. I make this wonderful dessert to compliment the Amish Breakfast Casserole (from this website) every holiday for my family and I always get smiles all around! I do tweak it a little bit by 1) sub roasted, crushed Almonds vs walnuts (which we prefer the taste) 2) dec almond extract to 3/4 tsp w/1/4 tsp vanilla extract and 3) made a brown sugar/almond strusel topping of: 1/4 cup crushed almonds, pinch of sea salt, 1/3 cup brown sugar, 2 tablespoons butter and 2 tablespoons flour mixed together. Again, it is a unique dessert that pairs up with a rich casserole/main dish. Oh, and don't forget the vanilla ice cream on top..delicious!

Spicy Pumpkin Chili

Reviewed: Nov. 8, 2011
What a great way to add yet another vegetable to a crock pot chili-pumpkin, who knew!? I did tweaked it for my preference: 1) replace the green w/a poblano pepper 2) added 8oz beef chorizo to the ground beef + 3) added 2 tsp unsweetened coco powder to the spices. Definitely will be making this easy + tasty recipes (:

American Lasagna

Reviewed: Jan. 23, 2011
Just made this wonderful dish, with 5 alterations, and it was moderately easy and delicious! I used fresh oregano vs dried as I love the taste of fresh herbs to dishes. Added 2 tsp of fennel seeds, as this was a secret that an old Sicilian grandmother taught me for her meat sauce. I than added 8oz canned tomato sauce with 1 c of water to the sauce as the meat sauce simmered because my sauce seemed very thick in consistency. Finally, I tried the pasta that did not need any boiling, just to experiment with it. The end product was, as I wrote, delicious! My family had second helpings..and so will you (:

Amish Breakfast Casserole

Reviewed: Jan. 3, 2011
A very hearty and satisfying dish. I tweeked it a little by sub bacon for cooked bkft sausage w/onions. I also took prev sugg to add salt + black pepper (1/2 tsp each), good call on adding the seasonings as I think it helped bring the flavors together. I also added 1 tsp of dried dill weed, 1 TBSP fresh green onions (my personal choice), 1/2 tsp of salt + blk pepper at the end. It needed to cook for longer than what it called for, as it did not seemed cooked at 40 mins. I let it cook for 1 hr + 5 mins total time. Topped it w/some fresh green onions for that ahh freshness to blend w/the richness of the dish. End product was very satisfying and delicious. It's also economical if you make it to serve a lot of hungry folks, or your own sm family for several meals! I give it 4 stars for taste, next time I'll have to try it with bacon (:

Seven Layer Magic Cookie Bars

Reviewed: Jan. 3, 2011
This is an easy recipe to tweek to your personal taste, and it comes out very good tasting and it can serve a lot if you cut it into sm sizes. I took some of the previous suggestion in customizing it. I did my own tweeking: Increased crumbs to 2 C + added 3 TBSP butter to make crust. Than I took prev suggestion of adding 1/2 can of condensed milk on crust, it made a HUGE difference in taste + keeping the crust from falling apart. I also dec butterscotch chips + semi-sweet chips to 1/2 C each and added 1/2 C each of bittersweet + 1/2 C milk chocolate chip. I used peanuts as the nut + added toasted coconut as the top ingredient. Finally, I also took another prev suggestion of adding the other 1/2 can of condensed milk on top (this came out tasting like a coconut macaroon, yum-o). Like I wrote, easy recipe to tweek to your own taste. Take this to your next gathering and you will make new friends, otherwise you'll end up eating it all up (:

Corn Casserole III

Reviewed: Jan. 3, 2011
We love anything corn + a casserole=delicious! This was so easy to prepare, but I did take prev suggestion of adding an egg, and I really do think that it helped bind this casserole together. Other than that, I made the recipe exactly as written. I give this recipe 4 stars for it great taste + ease of preparing. Thanks for the recipe (:

Favorite Old Fashioned Gingerbread

Reviewed: Jan. 1, 2011
Very good! I did take a suggestion to double the spices, which sounds like a lot, but it actually worked well. I also added 1/3 c softened currants, a personal choice. We had it with our morning coffee, the holiday flavors was delicious (:

Slow Cooker Mediterranean Stew

Reviewed: Mar. 27, 2010
Yum(: Since I love soft cooked vegetables, I was very happy with the outcome of this dish, along with the spices paired with them. I do agree with other raters by cutting the cooking time, it all depends on your crock pot and how you like your vegies cooked. Oh and don't forget to add SALT!

Slow Cooker Chicken Taco Soup

Reviewed: Jan. 3, 2010
Loved It! Quick & easy to make. This is the first time I used a slow cooker & I'm glad I choose this recipe(: I made a few alterations for out tastes: 1) replaced beer for chicken broth, 2) added a bay leaf & finally 3) added 1/4 tsp of chili powder & paprika. This is a keeper. My only regret is that I don't have a larger crock pot to double the recipe!!
