Buckeyes I

Easiest recipe for yumminess! My dad is crazy about peanut butter/chocolate and I SO did not feel like baking; this was the perfect solution. A couple of tips from a girl who is usually a disaster in the kitchen: I melted the butter, which made for an easy and stirrable dough. I then cooled the dough in the fridge for an hour before rolling balls. I waited nearly 3 hours with the balls in the freezer before dipping them in chocolate. I did half with milk and half with dark, to please everyone. I also followed the advice of a rater who suggested the natural peanut butter and smart balance butter...would never know the difference. YUMMO.

Pecan Pie Bars I

These were pretty good and were a quick fix for a pecan pie craving. The problem was that so many reviewers said to keep them in the oven longer, so I did...and the outsides came out completely crunchy. While you don't want it runny, you don't want to be eating toffee either...so my recommendation is to cook until bubbling and just starting to brown on top and around the edges. I think it's better when it's a little gooey...that is, after all, how pecan pie is supposed to be.

Chocolate Chip Oatmeal Cookies

These are a standard, oatmeal cookie. There was nothing to ooh or aah about. You have to give the cookie a couple of minutes to set before taking them off the pan or they will break apart, but that does make for a gooier cookie, which I do prefer. Cinnamon is a must.

Too Much Chocolate Cake

I have looked and looked and looked for a recipe that is THIS MOIST and I have finally found it!!!!! The cake stayed moist, almost wet in fact! The only gripe I would have is that it does taste kind of oily (a trade-off for the moistness I suppose!), so next time I will try the 1/2 cup oil, 1/3 cup milk variation. The glaze is too much to the already sweet cake...a butter cream or cream cheese frosting would go better. USE GOOD COFFEE INSTEAD OF WARM WATER! It adds really good flavor...I also put a dash of vanilla in for depth. Overall, what I had been searching for!
